What a morning……my darling son woke up this morning with fever and swollen eye….after taking one look at him I knew that trip to ER that morning was a guarantee….the result…..large pills to bring the infection and swelling down.
One little problem….DS doesn’t do well with large pills and these particular pills must be taken with food or there will be price to pay.
I don’t know about your children, but when DS is sick he won’t eat most of the foods he usually does.
One thing let to another… other words I had no choice, but to bake him something yummy….sweet and moist to help him with his pill issue…..something like…. Pineapple Carrot Loaf.


Pineapple Carrot Loaf



  • 4 Eggs
  • 3/4 cup Apple Sauce
  • 1 cup Brown Sugar
  • 3/4 cup Sugar
  • 1 1/2 cup Crushed Pineapple (drained)
  • 2 cups Carrots (shredded)
  • 2 Tsp. Vanilla Extract
  • 3 cups Flour
  • 1 cup Whole Wheat Flour
  • 2 Tsp. Baking Soda
  • 1 Tsp. Baking Powder
  • 1 Tsp. Salt
  • 1 Tsp. Cinnamon

STEP 1: Preheat oven to 350F. Grease two 9″ loaf pans.

STEP 2: In large bowl beat together the eggs, oil, brown sugar and sugar. Add shredded carrots, crushed and drained pineapple and vanilla extract.

STEP 3: In separate bowl mix together flour, whole wheat flour, baking soda, baking powder, salt and cinnamon.

STEP 4: Add the flour mixture into the batter and combine together until moist. Don’t over mix . Pour the batter into the loaf pans.

STEP 5: Bake for about 60 minutes or until done. Let it cool down before removing from loaf pan.
