Last night was a hockey practice night and I didn’t have much time to make dinner.
I wanted to make something quick , but delicious.
My husband just came home after being away for 10 days and he really needed good home cooked meal.
Since I had some chicken breast in the fridge I decided to make grilled chicken breast with rice.
I was thinking about nice sauce for the CHICKEN. I wanted to go with creamy sauce.
I stopped at the grocery store on the way home from the arena hoping to find some inspiration when I notice beautiful fresh spinach.
I also picked up little bit of fresh Feta cheese and bottle of white wine.
On the way home ….. thought popped into my head ….. grilled chicken breast with wine cream sauce with fresh spinach and Feta.
We shall call it …… Greek style cream sauce.
This will make 4 servings.
- 4 Boneless Skinless Chicken Breast
- 1 Tbsp Olive Oil
- 1/2 White Wine
- 3-4 Garlic Cloves (crushed)
- 1-2 Shallots (finely chopped)
- 1 cup Heavy Cream
- 1/4 cup Feta Cheese
- 2 cups Fresh Spinach (washed and dried)
STEP 1: In a large skillet heat the oil and grill the chicken breast until done and both side are nice and brown. Salt and pepper chicken breast. Take grilled chicken breast out of the skillet. Put it aside and keep warm.
STEP 2: De-glaze skillet with white wine. Add crushed garlic and chopped shallots. Let it reduce for about 2-3 minutes. Add heavy cream, bring it to boil and let it reduce by 50%. Salt and pepper to taste.
STEP 3:When sauce is thicker consistency and ready stir in the Feta cheese and spinach.
STEP 4: When plating place the chicken on top of the sauce or top it with the sauce.
This delicious Grilled Chicken with Greek style cream sauce dinner was made under 30 minutes
and was given A++ by my whole family….even my little nephews who are to be known as picky eaters.
