Every Friday during winter season Little Peanut has his hockey practice so our dinner is later then usual.

At the beginning of the season boys decided maybe Friday should be our Pizza Night….sounds like fun and no dishes or cooking for mom…..that’s what I thought.

So on Fridays we would order pizza before we left the hockey arena and pick it up on the way home.

It worked fine till Hormone Boy who’s Type 1 diabetic started to have very high Blood Glucose after eating it. We figured that there must be sugar in the pizza sauce…..

… following week we went without the sauce and the same thing happened again. At this point I knew there is sugar in the pizza crust.

I didn’t want to cancel our Friday Pizza Night so I dusted off my bread maker and I started making my own pizza dough….I made my pizza dough during the day….

… by the time boys had showers fresh homemade PIZZA was on the table……little more work for me…..,but  so worth it. We haven’t order pizza since.

My apology goes to our local pizza guy….sorry.

So every Friday I make our pizza…… Well, I make 3 pizzas because between four of us we like different things.

Two pizzas always remain the same with the occasional twist. I try to make my pizza different most of the time.

Last Friday I decided to make CARAMELIZED ONIONS, RED PEPPERS & RICOTTA Pizza  for myself I had to fight hubby for it… was yummy….yummy….yummy



Caramelized Onions, Red Peppers & Ricotta Pizza





  • 1 Thin crust pizza crust
  • 1 Onion (sliced)
  • Olive Oil
  • 2 Cloves Garlic (finely chopped)
  • 1 Red Pepper (sliced)
  • 1 Yellow Pepper (sliced)
  • Ricotta Cheese
  • 1/2 cup Skim Mozzarella

STEP 1: Preheat oven to 425F.

STEP 2: Lightly brush the pizza crust with olive oil, sprinkle with chopped garlic. The let it sit so the dough can rise a bit (if you are working with fresh dough).

STEP 3: Meanwhile slowly caramelize sliced onion in a skillet.

STEP 4: After you let pizza dough rest and rise for a bit (about 10 minutes) spread caramelized onions over the crust. Then spread the peppers. With a teaspoon drop little piles of Ricotta all over the crust. Cover with Mozzarella and you are ready for the oven.

STEP 5: Bake pizza for 10-12 minutes.. It won’t take long for the thin crust to bake.

    My goodness I looked at the white blobs in that first picture and I thought to myself, "Please, please be ricotta… you look so good… tell me it's ricotta." And then BAM, it's ricotta. Wow, these pizzas look great! I'm glad you were able to find a way to keep pizza night :) I've never, ever made my own pizza all by myself. I don't have a breadmaker — would this be possible to make without one…?

  2. I'm going to try this! Even with my odes to pie and cookies and such, I actually don't eat much sugar during the week b/c of a condition I have. That's probably why I write such cooing odes–it's forbidden love! I love pizza and we eat it a lot–I'm going to try this! I never thought of the sugar I might be taking in accidntly!

    Oh, that looks so good. I just recently made a pizza with ricotta cheese like that and it was awesome. The homemade dough looks great!
