In my family Pork & Potatoes always makes for a good dinner….. No matter how I make it my boys are pork and potato lovers.
Hubby being Italian prefers pasta…..then rice and……yes, then potatoes.
Since he’s been on the road we’ve been eating potatoes a lot……since I love potatoes as much as much kids do.
This Roasted Pork & Potato actually came from an Italian recipe my hubby inherited from his Italian grandma.
Originally it is made with chicken and ribs, but I used pork and put my own twist on it.
I didn’t have all of the ingredients for the original version so I changed it a bit…..
- 1-2 lbs Pork Loin
- 6 Potatoes (peeled and cut up)
- 1-2 Red Peppers (sliced in strips)
- 1 cup Mushrooms (sliced)
- Italian Parsley
- 4 Cloves Garlic (chopped)
- Olive Oil
- 1/2 White Wine
STEP 1: Wash and dry pork loin. Slice it to any size you want to.
STEP 2: Preheat oven to 395F.
STEP 3: In a skillet heat up oil and brown pork.
STEP 4: Put potatoes into large roasting pan. Coat them with olive oil and mix them all around so they are all well coated.
STEP 5: Add pork on top of the potatoes. Salt and pepper. Sprinkle with chopped parsley, rosemary and garlic.
STEP 6: Add mushrooms and peppers.
STEP 7: Roast for 45-60 minutes or until tender. Last 20 minutes add white wine into the roasting pan.
