With all the boys in a house lately there has been no leftover bananas.
I love Banana Bread and Banana Muffins, but no matter how many bananas I bought lately the boys are eating them before they go brown and mushy. I guess that is a good thing as long as you don’t crave Banana Bread.
As luck would have yesterday I noticed 1 lonely brown banana on the bottom of the bowl covered with new and fresh bananas.
It was like Christmas in July….let me tell you….I don’t know if my heart can handle that much excitement.
Anyway, I made yummy and low fat Banana Bread and I decided to share the recipe with you.
- 11/2 cup Sugar
- 3 Eggs
- 3/4 cup Unsweetened Apple Sauce
- 2 cups Flour
- 2 tsp Baking Soda
- 1/2 tsp Salt
- 1 tsp Cinnamon
- 2 cups Mashed Bananas
- 1/ 2 cup White Chocolate Chips (optional)
Preheat oven to 350F. Grease 2 large loaf pans.
In a large bowl cream together sugar and eggs. Mix in apple sauce.
In a medium bowl sift together flour, baking soda, cinnamon and salt. Gradually add it to the cream mixture.
Mix in bananas and chocolate chips.
Pour into loaf pans and bake for 45 minutes or until done.Bibi's Culinary Journey
