Stuffed Mini Meatloaves

Some people love MEATLOAF……some people dislike meatloaf cause their mom made it way too often when they were growing up….some just dislike ground beef….
….if you belong to the second group……maybe the problem is…..your mom kept making the same old tired MEATLOAF recipe week after week….in that case I don’t blame you.
……but, maybe…..just maybe it’s time to class up your mom’s boring meatloaf recipe….To make it more exciting without costing more……To wake up those taste buds…..
….what do you say?
It’s time to transform ordinary meatloaf into little gourmet fare…….it’s time to take Cinderella to the ball…..with my STUFFED MINI MEATLOAVES
This recipe makes 6 individual meatloaves.
- 1,5lbs Lean Ground Beef
- 2 cups Oats
- 1 Onion (finely chopped)
- 1 Tbsp Chopped Garlic
- 1 Egg
- 3 Hard Boiled Eggs
- Oven Roasted Red Peppers
- 1 Tomato Paste
- 2 Tbsp Sugar
STEP 1: In a large bowl combine together ground beef, oats, onion, garlic and egg. Salt and pepper to taste.
Divide the mixture into 6 equal parts.
STEP 2: Cut the hard boiled eggs in half.
: Flatten ground beef mixture pieces top with half of red roasted pepper and half egg. Make a ball and roll it in breadcrumbs.
STEP 4: Place each ball into jumbo muffin tin cup. Spread the tops with mixture of tomato paste and sugar.
STEP 5: Preheat the oven to 400F and bake for 50 minutes. Let it sit for 15 minutes before serving.
