|Spinach & Mushrooms Penne Marinara|
Lately I’ve been cooking lot of PASTA……
June is usually very busy month with school winding down…..field trips, recognition assemblies, wind up parties, last baseball games, swimming lessons. The list goes on and on.
Couple times a year I make a big pot of Marinara sauce and I keep it in small containers in the freezer as my go to quick meal idea.
Yesterday was one of those crazy days where I had less then 20 minutes to put dinner on the table.
Of course pasta was my answer….something quick & simple….something like…..SPINACH & MUSHROOMS PENNE MARINARA
To make Spinach & Mushrooms Penne Marinara you have to start with basic Marinara sauce.
Ingredients for add-on to Marinara sauce:
- Olive Oil
- 1Onion (chopped)
- 1 Tbsp Butter
- 2 cups Mushrooms (chopped)
- 1/2 cup Red Wine
- Bunch of Spinach (washed and dried)
STEP 1: In a skillet heat the oil and saute onions till translucent. Add the butter and mushrooms and saute till mushrooms are nice and done.
STEP 2: Add red wine and let it reduce to 2/3.
STEP 3: Mix the mushroom mixture with Marinara sauce and add spinach. Stir and cook for another minute or two.
STEP 4: Stir in cooked pasta and serve with fresh Parmesan cheese.
