Christmas baking is in full speed in our house.
Yesterday I was baking till I ran out of ingredients. Shopping trip is scheduled for tomorrow so I am taking the opportunity to share my recipes with you all.
One of the cookies I made yesterday are my youngest son’s favorite cookies. They are peanut butter oatmeal cookies full of nuts and candy coated chocolate pieces.We call them Peanut Butter Oatmeal Gems.
This recipe makes about 6 dozen of small (2″) cookies. I find this is the perfect size for Christmas cookies to share with your family and friends. Also perfect size for Cookie Exchange.
- 1 cup Crunchy Peanut Butter
- 1/2 cup Unsalted Butter (softened)
- 1 cup Brown Sugar (packed)
- 1 cup Granulated Sugar
- 1,5 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 3 Large Eggs
- 2 tsp Vanilla Extract
- 4 cups Rolled Oats
- 1 cup Flour
- 3/4 cup Walnuts (chopped)
- 1,5 cup M&M’s or Smarties (plain)
STEP 1: Preheat oven to 350F.
STEP 2: In a large bowl beat together peanut butter and butter.
STEP 3: Gradually add brown sugar and granulated sugar.Beat in the eggs and vanilla extract.
STEP 4: In another bowl combine rolled oats, flour , baking soda and baking powder. Stir it into the butter mixture and make sure it is well combined.
STEP 5: Add chopped walnuts and candy pieces into the cookie dough.
STEP 6: Drop cookie dough by a heaping teaspoon full onto the cookie sheet. Make sure they are about 2″ apart.
STEP 7: Bake for about 11 minutes or until the edges are lightly brown.
STEP 8: Cool on the cookie sheet for 2 minutes and then transfer cookies onto a wire rack to cool completely.
