Meatloaf….you either love it or hate it, right?
Meatloaf is a staple meal in many households across North America for many reason.
It is a comfort meal….budget meals….quick meal….family tradition meal……and the list goes on.
Every family has their own meatloaf recipe and their own way to serve it.
I myself have a few variations when making meatloaf for my family.
One of them - Sunshine Meatloaf I started making few years ago as a way to get my children eat more vegetables and get more fiber into their meals.
Till this day this variation is very popular in my house.
- 1lbs Lean Ground Beef
- 1lbs Ground Pork
- 1 Medium Onion (finely chopped)
- 2 cups Oats
- 2 cup Shredded Carrots
- 2 Eggs
- 1 can Tomato Paste (small)
- 2 Tbsp Sugar (I use Splenda)
- Onion Powder
- Garlic Powder
Preheat oven to 400F and grease 2 – 10″ loaf pans.
STEP 1: In a large bowl mix together ground beef and ground pork.
STEP 2: Add oats, chopped onion, salt, pepper, garlic powder and onion powder. Mix well together.
STEP 3: Mix in shredded carrots and eggs.
STEP 4: Divide meatloaf mixture in half and press each half into greased loaf pan.
STEPS 5: In a small bowl mix together tomato paste and sugar or Splenda. Spread it evenly on top of each
STEP 6: Bake for 30-35 minutes.
TIP: If you don’t have loaf pans just make 10″ rolls from each half and wrap them in wax paper and aluminum foil.
