Pomegranate Mousse Cannoli

 
 
Last winter as a part of promotion for POM Wonderful I came up with a recipe for delicious, light and decadent POMEGRANATE MOUSSE.

 
Ever since then I’ve been making Pomegranate Mousse and trying to find different ways of serving this decadent dessert.
 

I have to admit some of the tries were miss and some of them were a big hit….of course, I don’t want to share with you my disappointments and failures……., but I love to share with you my success and victory.
 

Therefore today I will share with you my POMEGRANATE MOUSSE CANNOLI.
 

Yes, I have been on Italian kick lately, but what can I say…..most of the people I love have Italian blood in their veins.
 

First….. I must admit that I cheated little bit because I could not find my mother-in-law’s Cannoli recipe so I went out and used the ones from the little Italian corner store.
 
I’ve been told by my reliable source hubs that even my MIL used this little trick once or twice.
 

I did however added special homemade touch to the cannoli by dipping them in white chocolate by myself if that makes it better. Does it? Sure it does…….
 
 

 
PRINTABLE VERSION 
 
Ingredients:

  • 24 Cannoli Shells
  • 3/4 cup POM Wonderful juice
  • 1/3 cup Sugar
  • 1 Tbsp Clear Gelatin (1 package)
  • 2 tsp PAMA Pomegranate Liqueur (optional)
  • 1 cup Heavy Cream

STEP 1: In a pot bring to boil POM Wonderful and sugar. Remove from heat.

STEP 2: Dissolve the gelatin according to it’s package and add it to the pomegranate mixture. Add the pomegranate liqueur and stir well. Cool it down till it’s starts to thicken.

STEP 3: In a large bowl whip the cream until firm. Stir little bit of the whipped cream into the cold pomegranate mixture till well combined. Gently fold in the rest of the whipped cream, cover and chill in the fridge.

STEP 4: With a pastry bag fill the Cannoli and leave in the fridge before you are ready to serve. Decorate with fresh pomegranate.

 

Pomegranate Mousse

 
After I filled all of my Cannoli I had quite a bit of Pomegranate Mousse leftover.
 

I mixed the Pomegranate Mousse with some fresh pomegranate seeds and I served it in Daiquiri glasses with a piece of Biscotti homemade of course.

    Yum! And I think that any points that you *might* have lost for using a pre-made shell are more than made up for by dipping them in white chocolate! ; ) YUM! Bet they were as yummy as they look!
