I’ve been in love with this TORT since I was 15 years old living in a dorm while attending Hotel Academy.
We didn’t have kitchens or kitchenettes in our dorm rooms, but we had a fridge on every floor.
My friends and I used to make this tort often during the warm months when fresh fruit was in season……sometimes we made it during winter months using canned fruit we brought from home.
Few days ago I picked last of the cherries so I figured it was time to make…..Sour Cream Cherry Tort…..the perfect summer dessert.
No baking….no heat from the oven…..very light……refreshing……
NO BAKE SOUR CREAM CHERRY TORT
- 2 Packages of Lady Fingers or Box of Nilla Wafers
- 32oz Sour Cream (I use light)
- 2 cups Icing Sugar
- 1 envelope Clear Gelatin
- 2 cups Pitted Cherries (or other soft fruit)
- Chocolate Shavings
STEP 1: Line 10″ round cake pan with plastic wrap.
STEP 2: Place a single layer of Lady Finger or Nilla wafer on the bottom of the cake pan.
STEP 3: In a medium bowl mix together sour cream, icing sugar and clear gelatin.
STEP 4: Spread half of the sour cream mixture over the layer of Lady Fingers.
STEP 5: Spread pitted cherries or other soft fruit over sour cream mixture.
STEP 6: Place another layer of Lady Finger or Nilla wafers (doesn’t have to be covered completely).
STEP 7: Spread the leftover sour cream mixture on top and sprinkle with chocolate shavings.
STEP 8: Refrigerate overnight or freeze for 3-4 hours.
