I always like to have some Puff Pastry in my fridge or freezer for a quick snacks or desserts.
Yesterday morning I noticed a package of Puff Pastry in the fridge and I thought I should make a special after school snacks for my boys. So I raided my fridge and found some staples that my kids love.
I used 2 ready-to-bake Puff Pastry sheets. I made one for my boys and one for me and my hubby.
You start by preheating your oven to 400F. Grease two cookie sheets.
Make sure your pastry is thawed out and room temperature.
Ingredients for kids version:
- 1 ready-to-bake Puff Pastry sheets (1 sheet makes about 10-12 pieces)
- 1 egg beaten
- 1 cup of shredded Pizza Mozzarella
- 1/2 cup thick Salsa
Unfold the pastry sheet on lightly floured surface. Gently brush it with the beaten egg. Spread the salsa and cover it with cheese. Roll up the sheet like you would a jelly roll. With sharp knife cut it into about 3/4″ pieces (10-12 pieces). Place it down on the cookie sheet, brush it again with beaten egg and sprinkle with paprika.
Bake for about 15 minutes or until golden.
Ingredients for my adult version:
- 1 Puff Pastry Sheet
- Egg (you should have enough left from the first sheet)
- 1 cup Ricotta cheese
- Fresh Spinach
- 2 Cloves chopped garlic
- Parmesan cheese
Follow the direction above instead of Salsa spread Ricotta cheese, sprinkle with chopped garlic, cover with fresh spinach (washed and dried). Instead of paprika sprinkle with Parmesan cheese.
