|Maple Smoked Bacon Egg Salad|
Fresh homemade bread and egg salad….now that’s lunch.
….nothing is simple when it comes to me and my cravings….not only I was craving Egg Salad…..I was also craving crisp bacon.
What is a girl to do? Combine them. That’s what I did.
I didn’t have time to make homemade bread so I settled for Grand Buttermilk Biscuits (always in my fridge).
- 4 Hard Boiled Eggs (chopped)
- 1 Shallot (finely chopped)
- 1 Tbsp Parsley (chopped)
- 4 Crispy Strips of Maple Smoked Bacon (chopped)
- 2 Tbsp Light Mayo
- 2 Tbsp Deli Mustard
I didn’t have any lettuce and tomato on hand make it “the ultimate egg salad sandwich” , but I recommend serving in with lettuce and tomato as well.
