Pork & Sauerkraut Casserole – Kolozsvar Káposzta

 

 

Growing up I had two wonderful grandmothers….both phenomenal cooks.
 

My maternal grandma was Slovak and she cooked for us all the wonderful Slovak dishes.

 

My paternal grandma was Czech married to Hungarian and she loved to cook all the delicious Czech and Hungarian dishes.

 

One of my favorite Hungarian dishes was Kolozsvar Káposzta (Kolozsvar Cabbage).
 

It was basically, pork and sauerkraut casserole with rice and smoked sausage.

 

The other day I was thinking about my grandma and I decided to make some Kolozsvar Káposzta for my family.

 

I didn’t have any spicy smoked sausage on hand so I made it with pork only. It was still delicious and cost less.

 

 

 

 

PRINTABLE VERSION:

 

Ingredients:
  • 11/2lbs. Pork ( you can use the cheapest cut)
  • 1 cup Rice (uncooked)
  • Oil
  • 1 Onion
  • 1 Tbsp Hungarian Paprika (sweet or hot – your choice)
  • 800 ml Sauerkraut
  • 2 cups Sour Cream
  • Salt
  • Pepper
  • Caraway Seed
STEP 1: In a large pot heat up the oil. Add chopped onion and saute till golden brown.Add paprika and saute for a minute or two. Add cut up pork. Brown it a little bit.
STEP 2: Pour 2 cups of water over the pork. Turn down the heat , salt and pepper, cover and saute until tender.
STEP 3: In another pot cook rice until half done.
STEP 4: After pork and rice are done grease casserole dish. Use 1/3 of the sauerkraut to make a bottom layer. Lightly sprinkle with caraway seed.Don’t drain the sauerkraut. Just gently shake off the juice.

STEP 5: Use 1/2 of the rice as a second layer.
STEP 6: Third layer is half of the pork with it’s juices. Don’t be afraid to add the juice. It will make the dish very moist and delicious.
STEP 7: Next is another layer of sauerkraut, then the rest of the rice , the rest of the pork and top layer of sauerkraut.
STEP 8: Pop it into preheated oven (350F) for about 40 minutes.
STEP 9: After the casserole is done take it out of the oven. Spread thin layer of sour cream mixed with touch of paprika. Put it back into the oven  and bake uncover for another 10 minutes.

STEP 10: Let it rest for 10 minutes before serving.You can serve it with dollop of fresh sour cream on top.
