Austrian Bread Dumplings



Are you a dumpling person?

 …….I know I am…….I love DUMPLINGS……

I prefer dumplings to rice….potatoes and pasta when it comes to having a delicious saucy dish…..nothing sucks up sauce or gravy the way nice and fluffy dumplings do.

Making fluffy traditional yeast dumplings is and art….art that I have yet to master (I think I just got too lazy cause my dad makes the BEST dumplings).

Since my dad is not always around to make yeast dumplings for me I fill that void with my #2 choice of dumplings….dumplings I had mastered…..Austrian Bread Dumplings.







  • 9-10 Kaiser Roll (day old)
  • 4 Tbsp Butter
  • 1 Egg
  • 2 Egg Yolks
  • 1 tsp Salt
  • 1 cup Milk
  • 1/3 cup Italian Parsley (finely chopped)
  • 1 Onion (finely chopped)
  • 1/3 cup Flour

STEP 1: For best results night before cut up day old rolls or bread into cubes. Place them in a large bowl and let them dry out overnight.

STEP 2: Ready to make dumplings….In a skillet melt the butter on medium heat. Add onion and cook till translucent. Add finely chopped parsley. Cook for another minute while stirring frequently.

STEP 3: Meanwhile in a small bowl whisk together egg, egg yolks, milk and salt until light and airy.

STEP 4: Add onion & butter mixture into the egg mixture. Whisk together lightly.

STEP 5: Pour mixture over the rolls. Add flour and mix well using your hands until all rolls are covered.

STEP 6: Form a loaf . Cover it and  let bread dumpling dough rest for 30 minutes.

STEP 7: After the dough is rested divide it into halves. With wet hands form two logs about 7″-8″ long.

STEP 8: Grease 2 pieces of aluminum foil about 12″x10″  with butter or margarine (not the shiny side).

STEP 9:  Place each log onto greased aluminum foil. Roll it up and secure the ends well. Be careful not to make any holes.

STEP 10: Cook bread dumplings for 30-35 minutes in a large pot of boiling water. Take the dumpling out. Unwrap the foil. Cut them up and serve.





Bread dumplings are traditionally served with goulash, stews or any meat dishes that come with sauce or gravy.

You can pan fry them with butter till they are golden and little crunchy or my favorite way is to fry them on top of caramelized onions.


Honestly…..there is no meat needed to be served with these dumplings ……Many times we have bread dumplings as a dish of it’s own with just butter and caramelized onions…..and some salad on the side…..

    The goulash recipe showed your dad’s bread dumpling slices.

    I searched your site, and found this dumpling post, but alas, it too, is not your famous Dad’s dumplings…

    Please share your dad’s bread dumpling recipe! They looked delicious. And lazy or not, you KNOW you want to spread that deliciousness around to the rest of us!
