Leftover Turkey Bake

 

Thanksgiving dinner is over and as every year there is lots of leftovers…. What to do with them?

Well, you can have TURKEY dinner three times a day for next three days….or….you can try something NEW.

Myself I got tired of having fridge full of Tupperware containers and constantly making and reheating plates of turkey and mashed potatoes for my kids.

I thought there must be an easier way to deal with leftovers from now on.
Where is a will….there is a way…..I decided to chop and mix all the leftovers together. Add few more ingredients and bake it.

Leftover Turkey Bake was born.

This easy dish surpassed my expectations and I couldn’t believe how everybody was enjoying this new….delicious…. comfort meal.

There is no real ingredients list to this. I was just working with what I had so the ingredients listed here are our leftovers.

 

 

 

 

You might have more or less leftovers so you will have to tweak it…..I gave you an idea….the rest is up to you.

Ingredients:

  • 5 cups Chopped Leftover Turkey
  • 2 cups Chopped Leftover Ham
  • 1 Chopped Onion
  • 1 cup Chopped Scallions
  • Chopped Leftover Vegetables
  • 5 cups Leftover Stuffing
  • 1/2 cup Chopped Parsley
  • 1 cup Shredded Cheddar
  • 4 Eggs
  • 1 cup Milk

STEP 1: Preheat oven to 375F.

STEP 2: In a large bowl mix together turkey, ham, onion,scallions, vegetables, stuffing, parsley and cheddar cheese.

STEP 3: In another bowl  beat together eggs and milk till fluffy. Add the egg mixture into the leftover mixture. Mix together with hands until well combined.

STEP 4: Put the mixture into a baking pan or casserole dish. Flattening it down till it’s firm. Cover with aluminum foil.

STEP 5: Bake for 35 minutes. Remove the foil and bake for another 15 minutes.

STEP 6: After that turn the oven on broil and broil on high for 10 minutes or until the top is brown and crunchy.

 

 

When Turkey Bake is done let it rest for 10 minutes before cutting it.

Serve with hot gravy over the top and side of cranberry relish.
