Tomato Soup With Egg Drop Pasta

 

I have to admit……I am loving this cooler weather…..and I am loving this rain (gives me a chance to show off my new rubber boots).

You know what else I love about fall?……SOUPS…..Yes, yummy…..hearty….homemade soups.

Who doesn’t love good homemade soup?

What can be better on a cold and rainy day then Sourdough Grilled Cheese Sandwich dunked in a bowl of steamy homemade Tomato Soup?

That is one of the ultimate comfort meals in my house.
My kids are funny characters. They will not eat fresh tomatoes, but tell them it’s tomato soup night and they will be as happy as clams.
I love my TOMATO SOUP with something in it. I used to make it with rice, but few years ago I discovered Hungarian Style Egg Drop Pasta.
First time I used the egg drops I wasn’t sure how big they will get and I ended up with one hearty tomato soup. You could stand your spoon in it.
One package of the Hungarian Egg Drops goes really long way.
This recipe makes almost 5L of delicious homemade tomato soup.
Tomato Soup With Egg Drop Pasta

 

 

PRINTABLE VERSION:

Ingredients:
  • 2 Tbsp Butter
  • 1 Onion (small, finely chopped)
  • 2 Tbsp Flour
  • 1 can Tomato Paste (13 fl oz)
  • 4L Water (you can use 1L vegetable stock + 3 L water)
  • 2 Bay Leaves
  • 2 Cloves Garlic
  • Salt
  • Pepper
  • 3 Tbsp Sugar
  • 1 cup Egg Drop Pasta
STEP 1: In a stock pot melt butter over low heat. Add the onions. Stir it around just enough to sweat the onions.
STEP 2:Add flour to make a rue. Cook for about 2 minutes while constantly stirring. Add 2 cups of lukewarm water or vegetable stock.

STEP 3: Add tomato paste and cook for about 2 minutes while stirring. Add the rest of the water and/or vegetable stock.
STEP 4: Drop in bay leaves, garlic, sugar, salt (depends if you are using vegetable stock with high Sodium content) and pepper.

STEP 5: Cook on low heat for an hour. Turned the heat up to medium low and add the egg drops. Stir it around and cook for another 30 minutes.

 

If you don’t have Hungarian Egg Drop Pasta you can use any small pasta like Alphabet pasta or rice.
