Kickin’ Chicken Parmigiana



Last week my house looked like ER ward… were dropping like flies thanks to the annual visit from FLU BUG….

Since I couldn’t leave them alone for few days we had to rely on pantry…..fridge and freezer.I am usually well stocked , but I tell you… day 3 the fridge was looking so sad and I actually started seeing the bottom of our freezer.

……perfect time to clean the fridge…..cupboards and freezer…..perfect time to do some FREESTYLE innovative cooking….

…..Perfect time for…….KICKIN’ CHICKEN PARMIGIANA…….







  • 4-6 Pcs. Tyson All-Natural Chicken Breast Patties (the brand I use)
  • 1/2 cup Marinara or Tomato Sauce
  • 1 cup Tillamook Pepper Jack Cheese (shredded)

STEP 1: Bake Chicken Breast Patties according to the instruction on the package.

STEP 2: When the chicken patties are done remove them from the oven. Top each chicken patty with heaping tablespoon of Marinara or Tomato sauce. (You can use store bought from a jar, but I use my own homemade Marinara sauce).

STEP 3: Place generous portion of shredded Pepper Jack cheese on top of Marinara or Tomato sauce.

STEP 4: Broil on high until cheese is perfectly melted (starting to bubble).





……there you have it…..delicious KICKIN’ CHICKEN PARMIGIANA dinner on the table under 30 minutes.

You can serve it with salad…..rice….pasta….potatoes…..

Since I was cleaning my fridge & pantry I served it on a bed of shredded hash browns fried with butter and onion.
