Kickin’ Macaroni & Cheese

 

OK, it’s confession time……Macaroni & Cheese for dinner in our house meant….. my teenager we lovingly refer to as Hormone Boy opening a box or two Kraft Macaroni & Cheese.

Why? Simple……I never was macaroni and cheese kinda of gal …..till the other day.

I saw an upscale restaurant menu review¬† and one of the dishes reviewed …..yes, you guessed it….Gourmet….made from scratch…..with delicious blend of cheeses…..MACARONI & CHEESE.

So I figured….why not…..I will try it…..I will try it my way……

…..and that’s how Kickin’ Macaroni & Cheese came to life…..and it was GOOD

 

 

PRINTABLE RECIPE:

Ingredients:

  • 2 Tbsp Butter
  • 2 Tbsp Flour
  • 2 cups Cream
  • 1,5 cup Tillamook Colby Jack Cheese (shredded)
  • 1 cup Tillamook Pepper Jack Cheese (shredded)
  • Salt
  • White Pepper
  • 1 tsp Red Chili Pepper Flakes
  • 5 cups Macaroni (cooked Al Dente)
  • 1/4 cup Fine Bread Crumbs

STEP 1: Preheat oven to 425F. Grease baking dish (I use 12x12x3″ baking dish).

STEP 2: In a skillet on medium high make a thick rue from butter and flour.

STEP 3: Add cream. Keep whisking until smooth.

STEP 4: Add 1 cup Colby Jack cheese and Pepper Jack Cheese.Stir till cheese is melted. Add white pepper, chili pepper flakes and salt. Cook until cheese sauce thickens.
STEP 5: Add cooked macaroni into cheese sauce and stir it around.
STEP 6: Pour macaroni and cheese sauce into baking dish. Top with remaining Colby Jack cheese and breadcrumbs.
STEP 7: Put in the oven and bake for 15 minutes. Broil on high for another 2-3 minutes or until the top is little bit crunchy.

STEP 8: Take out of the oven and let it sit for 10 minutes before serving.

 

 

 

….there you have it…… Kickin’ Macaroni & Cheese recipe…..creamy….cheesy….yummy goodness with the perfect kick……
