| Pepper, Ricotta & Sausage Casserole |
Winter cooking in my kitchen is all about…..COMFORT……
I love cooking and baking , but my favorite season for my culinary adventures in my own kitchen is WINTER….
During Winter I do not crave restaurant food (well, maybe on occasion)……during winter I love spending days in my kitchen making comfort food for my family.
One of the ultimate ingredients when comes to comfort food and my kids is PASTA…..closely followed by cheese and of course BACON (this dish doesn’t have bacon, but I can see myself trying it one time).
Few days ago I mentioned cleaning the fridge & cupboards due to food shortage on account of flu.
This dish is once again…..freestyle cooking at it’s best…..putting whatever is left in the fridge together.
I present to you…..PEPPER, RICOTTA & SAUSAGE CASSEROLE……
Ingredients:
- 5 cups Penne Pasta (cooked)
- 2 cups Ricotta Cheese
- 3 Cloves Garlic (crushed)
- 1/2 cup Half & Half
- 3 Eggs
- 1 Onion (thin sliced)
- 2 cups Sausage of Choice (thin sliced)
- 1 Bell Pepper (sliced)
- 1 Tbsp Olive Oil
- 1/3 cup Parmesan Cheese
STEP 1: Preheat oven to 425F. Grease 9″x13″ (3L) baking or casserole dish.
STEP 2: In a large bowl beat eggs with half & half. Add Ricotta, crushed garlic, salt and pepper. Mix it well together.Add Penne pasta.
STEP 3: Pour Penne mixture into baking dish and bake for 10 minutes.
STEP 4: Meanwhile in a large skillet heat up olive oil on medium heat. Add onions and sausage and cook until onions are caramelized and sausage is done. Add bell peppers and cook for another 2 minutes.
STEP 5: Remove Penne casserole from the oven. Top with sausage & peppers mixture. Sprinkle with Parmesan cheese and put back into the oven on low broil for 4-5 minutes.
STEP 6: Let it rest for 5 minutes before serving.
