Sunshine Salad with Balsamic Reduction Dressing

It’s so cold….windy….snowy….and honestly I am getting over comfort food (for now) and cravings of FRESH fruits….salads….vegetables are coming in.

I crave SPRING.….sunshine…..warmth…..

Yesterday as I was making MANLY CHILI for my boys I thought: “I can’t eat this….I need salad….pretty and tasty salad”

I opened my fridge…..made quick inventory and this is what I came up with…..I call it SUNSHINE SALAD

PRINTABLE VERSION:

Ingredients:

  • 1 Heart Of Romaine
  • 1/2 cup Red Cabbage (shredded)
  • 1/4 cup Carrots (shredded)
  • 2 Radishes (thinly sliced)
  • 2 Mini Honey Mandarin Oranges
  • 1/4 cup Slivered Almonds

STEP 1: Wash, dry and cut up Romaine. Put it on a plate.

STEP 2: Top romaine lettuce with shredded red cabbage, shredded carrots. Spread around thinly sliced radishes and sections of mini honey mandarin oranges.

STEP 3: In a frying pan on medium high heat quickly roast almonds for 1 or 2 minutes to bring our their flavor.

STEP 4: Sprinkle the almonds all over the salad and drizzle with Balsamic Reduction Dressing.

BALSAMIC REDUCTION DRESSING

Ingredients:

  • 1 cup Balsamic Vinegar
  • 1 Tsp Brown Sugar

STEP 1: Pour Balsamic vinegar into frying pan and on medium high heat let it reduce to half. Whisk it frequently.

STEP 2: Add brown sugar and whisk until sugar is completely melted. By now you should have syrup like consistency.

STEP 3: Remove from heat. Pour it into container or heat safe bottle. Cool it down before drizzling over salad.

Let me tell you…..this SUNSHINE SALAD was exactly what my body needed…..it gave me the needed spring in my step….
