Apple Walnut Muffins

 

 

Good Morning, All!……How are you doing this gorgeous Monday morning?

We had very busy weekend…..busy weekend that finished yesterday with participating in “Walk To Cure Diabetes” to support my son and his friend J…..both type 1 diabetic teenagers.

 

 

 

Busy weekend is followed by busy week…..right now I am on my way to Vancouver Island (6 hours drive & 2 hour ferry ride) to chaperone Twitch’s end of the school year trip…..

I will be back in few days…..so I didn’t want to leave you without a recipe so I am sharing recipe for delicious APPLE WALNUT MUFFINS…..hope they will hold you over till Friday….

PRINTABLE VERSION

Ingredients:

  • 1 cup Flour
  • 1 cup Corn Meal
  • 1/2 cup Brown Sugar
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 2 Eggs (beaten)
  • 3 Tbsp Apple Juice
  • 8 oz Greek Yogurt
  • 1/2 cup Buttermilk
  • 1/2 cup Walnuts (chopped)
  • 1 cup Apples (chopped)

STEP 1: Preheat oven to 425F. Lightly grease 12 muffin cup baking tin.

STEP 2: In a large bowl whisk together flour, corn meal, brown sugar, baking powder, salt and baking soda.

STEP 3: In another bowl mix together eggs, apple juice, yogurt and buttermilk.

STEP 4: Fold wet mixture into dry mixture until moistened.

STEP 5: Gently fold in walnuts and chopped apples.

STEP 6: Divide muffin batter evenly between 12 muffin cups. Bake 14-16 minutes or until toothpick comes out clean.

STEP 7: Cool muffins down for 5 minutes before removing them onto cooling rack.
