Apricot Ginger Chicken

Last week I had the pleasure more like bravery to accompany Twitch’s 4th grade class trip to Vancouver Island or Bamfield to be exact.

As a part of our adventure we were so fortunate to spend 3 fantastic days despite the rain @ Bamfield Marine Sciences Centre.
All the kids had so much fun all the adults were so exhausted and learned a lot about marine life…..environment and many other things in a fun & interactive way…..
….the highlight of the trip was the “touch tank” were kids got to experience and touch many sea creatures in a safe environment….and….of course….running WILD & FREE on PACHENA Beach…


….by the time we got home 5 days later I was exhausted…..tired….and of course……HUNGRY….

…hungry for some CHICKEN…..any chicken….

….5 days without any chicken dish I consider cruel & unusual punishment… first thing I made well, after good nigh sleep  after coming home was APRICOT GINGER CHICKEN with rice…..

….I have to tell you….after my chicken withdrawal this Apricot Ginger Chicken tasted like heaven….


  • 4 Boneless Skinless Chicken Breast
  • 1/4 cup Apricot Jam
  • 1 Tbsp Ketchup
  • 1 Tbsp Dijon Mustard
  • 1 tsp Ground Ginger
  • 1/4 cup Hazelnuts (toasted & chopped)
  • Fresh Chives

STEP 1: Preheat oven to 400F. Grease baking dish.

STEP 2: Wash and dry chicken breast.

STEP 3: In a bowl whisk together apricot jam, ketchup, Dijon mustard and ginger.

STEP 4: Place chicken breasts into greased baking dish.. Spread apricot mixture over the chicken breast.

STEP 5: Bake chicken for 20-25 minutes or until well done.

STEP 6: While chicken is baking toast and chop hazelnuts and chop fresh chives.

STEP 7: When chicken breast is done allow it to rest for 5 minutes. Plate and sprinkle with toasted hazelnuts and chives.

STEP 8: Serve with rice.
