Banana Blondies with Peanut Butter Frosting

I am so excited….and I just have to share it with you….things are finally returning to “somewhat” normal in my house.

Twitch started attending school full time (I know, I know school’s almost over) …..the only time he misses is to go to therapy & physio…..his pain is becoming tolerable and…..NO MORE CRUTCHES only on rare occasion…..

Hormone Boy is entering his second week on Prozac & his mood….school work….social life and DIABETES are doing so much better….he is trying so hard & I am so proud of both of my boys being so strong during all of this….

I was very skeptical for putting teenager on Prozac I am sure there are people who judge me for that , but I rather have teenager on Prozac temporarily putting his life and health on the right track then lose a child to depression and complications with diabetes.

….so LIFE IS FABULOUS….I am grateful for every morning….every day with my handsome boys…

…to celebrate our SUCCESS…..GRATITUDE and MOVING ON….I made a batch of delicious BANANA BLONDIES with PEANUT BUTTER FROSTING….

 

I adapted this delicious recipe for BANANA BLONDIES from The New York Times Recipes

PRINTABLE VERSION

Ingredients:

BLONDIES

  • 6 Tbsp Butter (unsalted & softened)
  • 2/3 cup Brown Sugar
  • 1 Egg
  • 2 Medium Bananas (mashed)
  • 1/2 cup Whole Wheat Flour
  • 1/2 cup Flour
  • 1/2 tsp Baking Soda
  • 1/2 tsp Vanilla
  • 1 cup Chocolate Chips

STEP 1: Preheat oven to 350F. Grease 9″ x 9″ baking pan.

STEP 2: Cream butter and sugar. Beat in egg. Stir in mashed bananas and vanilla.

STEP 3: In another bowl whisk together whole wheat flour, white flour and baking soda. Gently stir into wet mixture.

STEP 4: Add chocolate chips. Pour into grease pan and bake for 25 minutes.

STEP 5: Allow blondies to cool completely before cutting into squares and frosting them.

 

Banana Blondies with Peanut Butter Frosting

 

FROSTING

  • 1 cup Butter (unsalted & softened)
  • 1/2 cup Smooth Peanut Butter
  • 1 1/2 cup Icing Sugar
  • 1 tsp Vanilla

STEP 1: Beat together butter and peanut butter until light. Gradually beat in icing sugar and  vanilla.

STEP 2: Put frosting into piping bag and decorate banana blondies.
