Caramel Popcorn Cupcakes



I am not a big fan of reality TV…..when I watch TV I want to see talent…..positive message….clean humor….

I want to feel like I got some value for my time….not that I just wasted hours of my life that I can never get  back….

I do enjoy reality competition shows especially anything to do with FOOD …..I have few favorite foodie reality shows like Ace of Cakes can’t watch Cake Boss – too much screaming and ego….and I always check out what’s new in foodieville reality TV…..

I watched few episodes of  THE CUPCAKE GIRLS and as much as I am impressed with how two best friends managed to built cupcake empire without zero baking knowledge or so they say and still remain friends & business partners…..I am not a big fan of the show because of……the usual TV reality DRAMA.

However…..being a CUPCAKE LOVER I always wanted to try their CUPCAKES…..


Two weeks ago opportunity presented itself…..while waiting for a ferry to Nanaimo with 11 children…..young….innocent…..always say what’s on their mind….children.





What better way to test CUPCAKES from The Cupcake Girls…..I bought 24 mini assorted cupcakes…..two per child….

After they finished I asked their opinions about the cupcakes…..there  was no excitement….just casual “they good”….”not  bad”….”pretty good”…..few “I don’t like them”

Then I asked the children without bribery to compare those CUPCAKES to my cupcakes (over the years I baked hundreds of different and unusual cupcakes for these kids)…..

The result…..NO COMPETITION…..according to these sweet children my cupcakes are “the best”…..”the bomb”…..”out of this world”…..”super yummy”

I might not have CUPCAKE EMPIRE like the Cupcake Girls, but I make ….pretty kick-ass CUPCAKES… I’ve been told.

As a reward to my test panel I made them a batch of CARAMEL POPCORN CUPCAKES…..sorry Cupcake Girls….this crowd is mine….




  • 1 1/4 cup Flour
  • 1 tsp Baking Powder
  • 1/2 cup Butter (unsalted & softened)
  • 1 cup Sugar
  • 1 Egg
  • 1 Egg White
  • 2 tsp Vanilla Extract
  • 1/2 Buttermilk

STEP 1: Preheat oven to 350F.Grease and line with cupcake liners 12 muffins cups.

STEP 2: Beat together butter and sugar until light. Gradually beat in egg, egg white and vanilla extract.

STEP 3: In another bowl whisk together flour and baking powder.

STEP 4: Slowly mix in flour mixture into butter mixture alternating with buttermilk. Make sure you will begin and end with flour.

STEP 5: Divide evenly among muffin cups.Bake for 20 minutes or until cupcakes are golden brown and toothpicks comes out clean.

STEP 6: Cool in muffin cups for 5 minutes then transfer onto cooling rack and cool completely before frosting.


  • 1 cup Milk Chocolate (chopped)
  • 1 cup Sugar
  • 1 cup Heavy Cream
  • 4 Tbsp Butter (unsalted & softened)
  • 1/2 cup Icing Sugar

STEP 1: In heavy pot cook sugar on medium-high until it starts to melt. Stir and keep cooking until sugar is golden brown and smooth.

STEP 2: Remove from heat and slowly pour in heavy cream.

STEP 3: Place back on the heat and on medium-high cook while stirring until bubbling slows down.

STEP 4: Pour chopped milk chocolate into caramel mixture. Whisk until smooth. Chill until the mixture thickens.

STEP 5: When mixture thickens beat caramel mixture on medium speed, add butter and icing sugar. Beat until fluffy and frosting like consistency.



Caramel Popcorn Cupcakes




Spread caramel frosting over cupcakes making dome like shape. Decorate with CARAMEL Popcorn.

If you want your CUPCAKES look like movie popcorn buckets use white fondant to wrap around each cupcake.
