Chicken Mandarin Salad



I love watching cooking shows on Food Network, but most days I don’t have much time….


….however last few months while staying at home with Little Peanut (now we call him Twitch – a nickname his physio therapist K gave him) we spent hours and hours watching Food Network cooking shows and planning our next adventures in the KITCHEN.


….one of our favorite shows was PAULA DEEN COOKING SHOW…..especially when she was cooking with simple ingredients….making familiar dishes….





One of my favorite salads always has been CHICKEN SALAD and over the years I made many variation…so when Paula Deen was making Chicken salad with hard boiled eggs in it I got so excited and I had to make her CHICKEN MANDARIN SALAD (not sure how she called it) the next day…..


…it was DELICIOUS…..the eggs sure completed the taste…..just PERFECT Chicken Salad!


The only changes I made was grilling the chicken instead of broiling…..and adding more MANDARIN Orange…..cause I love them…





  • 2 Boneless Skinless Chicken Breast
  • 1/4 cup Green Onions (chopped)
  • 1/4 cup Celery (chopped)
  • 2 Hard Boiled Eggs (chopped)
  • 1/4 cup Walnuts (chopped)
  • 1/2 cup Light Mayo
  • 3/4 cup Canned Mandarin Oranges (drained)
  • Salt & Pepper

STEP 1: Grill chicken breast. Allow it to cool and chop.

STEP 2: In a bowl gently mix all the ingredients together except mandarin oranges.

STEP 3: After plating the chicken salad decorate with mandarin orange segments.






4 Servings -  Amount per Serving

Calories 348.2, Total Fat 19g,  Saturated Fat 3.2g,  Poly Fat 4.2g, Cholesterol 184.9mg,  Sodium 358.2mg, Total Carbohydrate 11.7g,  Dietary Fiber 0.8g,  Sugars 8.3g,  Protein 31.9g
