Strawberry Nutella Crepes

 

 

Yesterday was very long and emotional day for my boys……between the neuro-psychiatrist evaluations…..diabetic clinic with not very good A1C results…..physiotherapy and few other things by the time evening arrived…….

 

…….they were done…..done…..feeling done…..

 

I had to do something  to bring up their spirits and put smiles on their faces to end the day on POSITIVE note…..

 

…..and one of the ways to put smiles on my boys faces is with FOOD…..yummy food….

 

….this was not the time for healthy good-for-you food…..this was one of those Desperate Times Call For Desperate Measures…..this was time for little INDULGENCE to lift the spirits…..

 

…..in other words……it was time for some CREPES……Strawberry & Nutella Filled Crepes….

 

 

 

 

…as I was watching my kids smiling and enjoying their crepes I was quietly remembering the past years….the simple times….the times when they were little….innocent….healthy….unharmed…..

 

….the times when they didn’t have trust issues…..anger…..depression….

 

Then I looked at my boys laughing and enjoying their CREPES and I knew…..one day soon….we will be OK….one day soon I will get my children back to the way they used to be…..and stronger…..

 

 

 

 

PRINTABLE VERSION

 

Ingredients:

CREPES

  • 1 cup Flour
  • 1 cup Milk
  • 2 Eggs
  • 1/4 cup Butter (melted)

STEP 1: Whisk or blend flour, milk, butter and eggs until well combined.

STEP 2: Cool crepe batter in the fridge for at least an hour or overnight.

STEP 3: Heat 8″ skillet or crepe pan on medium heat. Lift hot pan from the stove. Pour 1/4 cup of crepe batter onto it and quickly swirl and tilt the pan to cover the bottom with crepe batter.

STEP 4: Cook until slightly golden and with help of spatula flip and cook the other side until perfect.

 

 

Strawberry Nutella Crepes

 

 

NUTELLA & STRAWBERRY FILLING

  • 1/2 Nutella Spread (softened)
  • 1 1/2 cup Strawberries (sliced)
  • 1 cup Heavy Cream
  • 1 Tbsp Icing Sugar
  • 1 tsp Vanilla

STEP 1: Whip heavy cream until peaks start forming. Beat in icing sugar and vanilla.(You can use Whipped Topping. I prefer real cream.)

STEP 2: Fold sliced strawberries into whipped cream.

STEP 3: Spread Nutella evenly on top of each crepe. Then cover with layer of strawberries and cream.

STEP 4: Roll or fold crepes and serve.
