Blueberry Crumble Cake

 

I couldn’t imagine a better start to my weekend…..

Friday night my wonderful hubby sent me a gorgeous bouquet of flowers….”Just Because”…..

Saturday morning both of my boys wanted to make me happy after little bit of mother’s guilt and agreed to go to the Farmer’s Market with me….I was ecstatic…..

 

 

 

We got lot of tasty & fresh organic veggies & fruit….and of course more BLUEBERRIES so I can make another Blueberry Crumble Cake the first one vanished within minutes….

After Farmer’s Market we spent the afternoon in our kitchen cooking & prepping meals & snacks for the week ahead…

 

 

Everything went smooth….we made some Mexican Rice inspired by Devi from Diddles & Dumplings….some delicious Potato Salad…..we boiled some eggs…..marinated chicken…..baked muffins….prepped veggies & salads……

…..everything went smooth…..yep it did………till

…..our kitchen sink plumbing BLEW UP……water everywhere…..mess all around…..dirty¬† dishes waiting to be washed…..NO SINK!!!

I spent most of my Sunday trying to fix the plumbing with the help of my BFF….we tried….we celebrated…..few times…..very prematurely……

…..all proud that we don’t need No Stinking Men to help us……

……It’s Monday noon & I am waiting for a PLUMBER….yes…..I am waiting for a man to come & rescue me…..

…..unless the universe got my back & sends me a girl plumber……quietly hoping….wishing…praying.

 

Blueberry Crumble Cake

 

While I am waiting for my kitchen sink to be fixed I will share with you my BLUEBERRY CRUMBLE CAKE…..no only because so many of you asked for it, but because…..it is out-of-this-world addictive….

PRINTABLE VERSION

Ingredients:

  • 1/2 cup Butter (unsalted & softened)
  • 2 Eggs
  • 1 cup Sugar (or Splenda or Equal)
  • 1 tsp Vanilla
  • 2 cups Flour
  • 2 tsp Baking Powder
  • 1 cup Buttermilk
  • 1/4 Fine Breadcrumbs
  • 1lbs Fresh Blueberries
  • 1 cup Sugar
  • 1/2 cup Flour
  • 1/2 cup Butter (cold)

STEP 1: Preheat oven to 375F. Grease 15″ x 13″ baking pan.

STEP 2: Beat together butter and sugar until light.

STEP 3: Beat in eggs one at the time and vanilla.

STEP 4: In a bowl whisk together flour, pinch of salt and baking powder.

STEP 5: On medium speed mix flour alternating with buttermilk into butter mixture.

STEP 6: Spread cake mix onto greased pan. Evenly coat with breadcrumbs and washed blueberries.

STEP 7: In a bowl put cut up cold butter, sugar and flour. Work with your fingers until you have a crumbly texture. Spread evenly on top of the blueberries.

STEP 8: Bake for 20-25 minutes.

STEP 9: Allow the cake to cool before you cut it.

 

If you use Splenda or Equal it will make a wonderful diabetic friendly dessert…..my son loves it!
