Chocolate & Peanut Butter Covered Pretzels

” Promise Yourself … To Look At the Sunny Side Of Everything & Make Your Optimism Come True…”
~ Christian D. Larson ~

….this is a promise I give myself every morning when I wake up…..

….I try hard…..every single day to live up to this promise…..some days it’s easy…..and then there are days like yesterday…..

….days I start by waking up EXHAUSTED….

Last few days have been very emotional for Twitch…..still suffering with many issues after his accident…..lately he’s been having mental meltdowns….especially at night.

Well, last night was one of the nights and it took me till early morning hours to settle Twitch down and help him to fall asleep….

….which means I had no sleep & Twitch stayed home from day camp….so no morning nap for me…

I refused to get myself down….I tried to work through it….and then my day took a turn for better……

I received a phone call… call we have been waiting for forever….after 6 months living with pain Twitch will finally see child surgeon at Children’s Hospital next Friday….

….I was so excited….finally some results….I can’t even imagine knowing what is actually wrong with my child and being able to get him the help he needs.

Suddenly my day didn’t seem so bad….and then…..I asked Hormone Boy to help with dinner….

….all I will say…..thank goodness Pizza delivers….

While we were waiting for our pizza I decided…..little celebration was in order…..

I whipped up quick and easy treat….CHOCOLATE & PEANUT BUTTER COVERED PRETZELS

  • 12 Pretzel Rods
  • 1/2 cup Creamy Peanut Butter
  • 1/4 cup Icing Sugar
  • 1 Tbsp Vanilla
  • 6 – 8oz Semi-Sweet Chocolate or Milk Chocolate
  • 1/2 cup Hazelnut (crushed)

STEP 1: Beat together peanut butter, vanilla and icing sugar.

STEP 2: Cover half of each pretzel rod with peanut butter mixture. Put it into freezer for 15-20 minutes.

STEP 3: In a microwave or on low heat in double boiler temper chocolate until it’s dipping consistency.

STEP 4: Dip chilled pretzel rods in melted chocolate. Cover only peanut butter. Then dip in hazelnut.

STEP 5: Let the chocolate harden.

These Chocolate Peanut Butter Covered Pretzels are also great as party favors….party treats…for school parties.

You can wrap them in individual bags with pretty ribbon…..possibilities are endless….

  1. Love your quote, and your pretzels! I’ve done chocolate dipped ones, but never added peanut butter or hazelnut…will have to give it a try!:-)
