Strawberry Shortcake In A Jar



The summer is in full swing…..sun is bright & burning….the A/C is working hard…..oven is hardly working….

Yep….it’s very hard to make meals using my stove & oven right now….., but there is plenty delicious DESSERTS & salads we can make….

My kids don’t even show an interest in big meals when it’s hot…..even Hormone Boy slowed down his consumption…..and my wallet thanks him….

This past weekend our little town celebrated International Sunshine Festival…..part of which was free public swim……and…..of course…..CARNIVAL….

It was so hot…..I thought my brain will melt….,but kids just don’t understand…..




Luckily, with the help of dip in the pool…..tons of frozen lemonade & water…..cans of mosquito spray……occasional breeze while standing under the rides I wish they would never stop….I SURVIVED the weekend….kids were happy….I was alive….

When we came home I needed to treat myself to something delicious…..cold….easy to make….

I made us few STRAWBERRY SHORTCAKES In a Jar……and all was good with the world…..again….




Funny how sweet strawberries….cream…..and ice cream make the world a better place…..



Ingredients:

  • 1lbs Strawberries (sliced)
  • 2 Tbsp Sugar
  • 1 cup Whipped Cream
  • Chunks of cookies or cake (I used my Banana Blondies)
  • Vanilla Ice Cream

STEP 1: In a saucepan cook strawberries with sugar and little bit of water until the whole mixture thickens. Cool it down.

STEP 2: Wash & dry 6 wide-mouth canning glass jars.

STEP 3: Whip whipped cream until firm.

STEP 4: Assemble Strawberry Shortcakes: whipped cream, strawberries in syrup, chunks of cookies or cake, whipped cream, vanilla ice cream, sprinkles….

I have to say…..this STRAWBERRY SHORTCAKE sure hit the spot….and if I say so…..it looked pretty fabulous as well….
