Beef & Pork Bratislava Style Stew (Bratislavský Tokáň)

I don’t know if the weather is getting cooler or I am getting used to the never-ending heat, but seems like I can tolerate it much better last few days.

I think my brain just had enough and told my body to SUCK IT UP…..and ride it out….for few more weeks.

Regardless of what is going on between my brain & my body not taking any sides….I decided to turn on the stove and cook something….

I think my kids forgot what real cooking is…..cause my youngest walked into the house with words….”what’s going on…I can smell something strange”….

….yep, I think they had enough sandwiches, salads, BBQ and take-outs…..

I remember when I was little and lived in a hotel one of my favorite dishes was this delicious mixture of beef & pork with mushroom, peas and tomato and touch of sour cream called Bratislavský tokáň … translation….Beef & Pork Bratislava Style Stew….(got better suggestion?)

It wasn’t on a regular menu, but they made it often as Daily Special…..

After talking to my dad & surfing the Internet we came up with this version of 

Beef & Pork Bratislava Style Stew 

(Bratislavský tokáň)



  • 1lbs Stewed Beef
  • 1lbs Pork Loin
  • 3 Tbsp Olive Oil
  • 1 Onion (chopped)
  • 2 Tbsp Tomato Paste
  • 1 1/2 cup Mushrooms (sliced)
  • 1 1/2 cup Frozen Peas
  • 1 cup Sour Cream
  • 1 tsp Hungarian Paprika
  • Salt
  • Pepper

STEP 1: Cut pork and beef into stir fry strips.

STEP 2: In a deep skillet on medium high heat heat up olive oil. Add onion and paprika and saute until onions are translucent.

STEP 3: Add meat and quickly brown it. Add tomato paste, mushrooms, peas and water (about 1 cup). Stir it. Add salt & pepper to taste. Cover

STEP 4: On medium low heat saute until meat is tender and done.Take off the heat. Mix in sour cream and serve.

You can serve this Beef & Pork Stew with rice, spaetzli or small pasta. Some people also put a dollop of whipped cream on top, but I don’t think it’s necessary.

    I see that you have stated this could be served with rice, spaetzli or small pasta. What did you have in the picture as a side with the stew? Do you have a recipe for it as well? It looks delicious. Thank you.
