Chocolate Cupcakes With Peanut Butter Frosting

Chocolate & Peanut Butter Cupcakes



Thank you…..thank you…..thank you……MOTHER NATURE!

I am so very grateful for that little cool down and short thunderstorm we got yesterday.

The air feels so much fresher….my brain got well deserved rest…..my children perked up….as well as my garden…..and……I TURNED ON MY OVEN!!! 




LOVE was in the air last night….and it wasn’t even Valentine’s Day…..

…..and I will leave you with that…..





PRINTABLE VERSION



Ingredients:



CHOCOLATE CUPCAKES

  • 3/4 cup Flour
  • 3/4 cup Cocoa Powder
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 3/4 cup Butter (unsalted & softened)
  • 3/4 cup Brown Sugar (packed)
  • 1/3 cup Sugar
  • 2 Eggs
  • 2/3 cup Heavy Cream
  • 1 Tbsp White Vinegar



STEP 1: Preheat oven to 350F. Grease and line with cupcake liners 12 muffin cups.

STEP 2: In a bowl whisk together flour, cocoa powder, baking powder and salt..

STEP 3: In another bowl beat together butter, brown sugar and sugar until fluffy. Gradually beat in eggs.

STEP 4: In a small bowl combine heavy cream and vinegar.

STEP 5: Beat flour mixture into butter mixture little bit at the time alternating with heavy cream mixture. Start and finish with flour.

STEP 6: Evenly divide cupcake batter into muffin cup and bake for 20-22 minutes or until done.

STEP 7: On cooling rack cool completely before frosting.


Chocolate & Peanut Butter Cupcakes



PEANUT BUTTER FROSTING


  • 1/2 cup Butter (unsalted & softened)
  • 1/2 cup Smooth Peanut Butter
  • 1 cup Icing Sugar
  • 1 tsp Vanilla
  • 1 Tbsp Heavy Cream



STEP 1: Beat together butter and peanut butter until light.

STEP 2: Slowly beat in icing sugar, vanilla and heavy cream.

STEP 3: Fill piping bag with frosting and pipe onto cooled chocolate cupcakes.

      Those are adorable! Truth be told, though, I’d just take the bowl of frosting, grab a spoon, and eat myself into a sugar coma with that amazing stuff!

      you can never go wrong with peanut butter and chocolate! they are two of the most amazing flavors ever made and when they marry each other in cupcakes like yours, the result is awesome!!! :P

      my peanut butter frosting is slightly different than yours… i don’t add butter. i will try this next time and see if i can still use it to decorate…hehehe
