Brie & Pear Flatbread

 

 

Hello, my dear friends…..I am getting a late start today….

I do have a good excuse….I spent the morning with my BFF  planning her hubby’s secret 40th birthday party over coffee….

….it’s OK….no worries….he does not read my blog!

….I am in charge of food….sweet table and of course…..CAKE…… It is a month away, but I need to start planning….thinking….sketching……………………………………………………………………………..two weeks ago!

I won’t give you more details…..all I will tell you that it will be……..wait for it…….LEGENDARY!

 

 

Anyway…..I can’t home absolutely starving….I needed something delicious…..and fast…..

….my favorite quick lunch……BRIE & PEAR FLATBREAD with PECANS

 

I came up with this deliciousness (is that a word?) few weeks ago under similar circumstances and pressure.

It’s easy to make….quick…..satisfying…..DELICIOUSNESS (it’s catchy).

 

 

Ingredients:

  • 1 Pita Bread
  • 6-8 Slices of Brie
  • 1 Pear
  • 1 tsp Apple Jelly (or honey)
  • 1/4 cup Roasted Pecans (chopped)

STEP 1: Place pita on cookie sheet. Brush lightly with olive oil (you can skip the oil).

STEP2: Arrange brie slices around the circle.

STEP 3: Place under the broiler until the brie is almost melted.

STEP 4: Remove from the oven. Place pears on top of brie. Brush top of each pear with apple jelly. Top with pecans and put back under the broiler for 1-2 minutes.

 

You have delicious snack or lunch under 15 minutes….that’s what I call FAST FOOD!
