Fabulous good morning to you all….isn’t life magical?

Last week my daughter (from another mother) our sweet Sharna turned SWEET 16!…..what a magical age….

As I was thinking about Sharna almost all grown up and about her birthday cake I started thinking about how simple life was when I was 16….

….yet at that time I couldn’t wait to grow up…..I couldn’t wait to be free and do whatever I want…..what a DREAMER I was…

When I was 16 I was living in a boarding school (mixed gender) at a Hotel Academy….my only problems were keeping up with all the gossip and drama….picking up sides between friends…switching boyfriends….shopping…having fun….trying to be part of the popular crowd….and oh, studying (not my favorite activity).

Boy, I thought my life was so hard!!!

 

 

My biggest issue was to keep figuring out how to use cheat sheets and don’t get caught….I was kind of an expert in that (don’t tell my kids).

In our classrooms we used to sit 2 per desk (always me & my BFF) and our desk was cover with vinyl tablecloth which we were allowed to scribble on.

The 16 year old genius I was I decided to use the tablecloth to my cheating advantage…..I had big history and economics exams coming up….instead of pulling all nighter (another study skill I was famous for) I decided to write cheat sheets on my tablecloth in Russian….

Yep……genius…..I am telling you……instead of studying I spent all night writing cheat sheets in Russian……

Now you are thinking……she must be really smart translating all Slovak cheat sheets into Russian …….nope…..not that smart…..

…..more like brilliant…..I wrote all cheat sheets in Slovak using Russian alphabet…..

…..yes, life was really hard for me when I was 16!

 

 

So my sweet Sharna turned 16 and I am pretty sure she is going through the same issues…..same feelings….same resentments as I was in her age…….minus the cheating (not proud of that now)

Right now, all we can do is to show her how much we love and support her……and one  of the ways I show my love to is making special cakes…

 

Cream Puff Birthday Cake

 

When Sharna’s birthday came around I was not sure what to make her….I wanted to be different…..I didn’t want to make another fondant cake….I wanted to be special just like her…..

Sharna loves everything I cook and bake…..she’s my helper when I need her…..and she loves my Cream Puffs…or Profiteroles….or choux à la crème…..whatever you want to call them….

I decided to make something nobody would expect…..I made Birthday Croquembouche also known as Cream Puff Tower.

 

 

There are many recipes for profiteroles, cream puffs or choux balls, but I use Laura Calder’s recipe and I love it.

For this recipe I used 150 choux balls filled with Laura’s pastry cream. If you are using Laura’s recipe triple the ingredients for choux balls and for pastry cream as well.

Choux Ball + Pastry Cream = Profiteroles

Ingredients:

  • 120-150 Profiteroles
  • 4 oz Semi-Sweet Chocolate
  • 1 pkg. Purple Candy Melts
  • 11/2 cup Sugar
  • 1/4 cup Water
  • Edible Disco Dust
  • Candy

STEP 1:  Put chopped chocolate into microwaveable bowl & temper it (30 seconds at a time) until ready for dipping.

STEP 2: Dip about half of profiteroles in chocolate and let it harden.

STEP 3: Melt candy melts and dip the rest of profiteroles. You can leave few plain ones for the top.

STEP 4: Start arranging chocolate balls in a circle (about 10″) and attach them together with candy melts.

STEP 5: Make cardboard paper cone to fit into your bottom circle and then just keep building a tower from profiteroles. Use candy melts to attach them together.

STEP 6: Decorate with candy.

STEP 7: In a saucepan boil sugar and water into caramel. Drizzle the tower as much as you like. Dust with disco dust.

 


I made this Birthday Croquembouche using purple candy melts and chocolate because that is what my daughter likes. You can use your own colors…..different candies or just make it all chocolate. It’s up to you…..have fun with it!
