Creamed Spinach with Fried Egg & Potatoes




Growing up I was a strange child…..by strange I mean…..I loved SPINACH…..

I think I was the only one from all of my friends and cousins that would eat spinach every day….no issues…



I loved SPINACH prepared many ways, but……..

…..my favorite Spinach dish was……Creamy Garlic Spinach with Fried Egg & New Potatoes…..yum….



…I can still taste it….

The egg yolk running all over chunks of creamy spinach….the spicy bite from garlic…..the soft and buttery new potatoes…..oh, yes…..I was in heaven.



What made me think of Creamed Spinach?

….I was thinking about the good old days….days with less issues….less responsibilities…..the simple days….

The start of school hasn’t been easy for Twitch….so things on the home front are little bit hectic….

….too many panic attacks…..too little professional help….

There is only so much I can do to help my children to get better & move forward…..

….one thing I can do to give them some comfort and feel my love is with cooking & baking….

Creamed Spinach with Fried Egg & Potatoes



…so I thought if Creamed Spinach with Fried Egg gave me so much comfort & feeling of family love then it for sure will give some comfort to my boys….

I made it….they ate it….we loved it…I saw some smiles…..right before the bedtime panic attack….

….so I am off to comfort my baby Twitch and I will leave you with my CREAMED SPINACH recipe.



PRINTABLE VERSION

Ingredients:

  • 300g Frozen Chopped Spinach (defrosted & drained)
  • 3 Tbsp Flour
  • 2 Tbsp Butter
  • Onion (grated)
  • 6 Cloves Garlic (grated)
  • 1 1/2 cup Milk
  • Salt
  • Pepper

STEP 1: In a saucepan on medium melt butter and whisk in flour. Make rue.

STEP 2: Add grated onion and garlic into the rue. Stir it around. Add milk and cook for few minuted.

STEP 3: Add spinach. Salt and pepper. Cook until spinach is heated through.

STEP 4: Serve topped with soft fried egg.

    I had to laugh when I saw this post! As a child my mum would regularly serve creamed spinach on toast with a fried egg on top and I absolutely hated it. Funnily enough though I would love it now so thank you for reminding me of another child hood dish that I have to revisit!

    i have never had creamed spinach! Honestly, even though I love spinach, I have always been a little scared of it. Maybe it is time I walk through that fear!

    Well you have finally done it–you’ve created a dish that I would not eat. But that’s okay, it isn’t your fault, I just don’t like spinach and creamed spinach just destroys my appetite. Your recipe is very concise and easy to follow, though!

    i tend to just throw spinach in my lentil soup but i have a feeling if i try your creamy version, i am bound to eat spinach more often coz it looks yummmmmyyyy!
