Good morning, my dear friends!
Hope you are all well….and ready to…..BAKE…..yes, today we are baking…..
Today I will teach you how to make super easy…..delicious…..full of flavor…..BANANA cake with a twist….
……BANANA LIME CAKE…..pretty enough to serve at any dinner party….and so easy that novice baker can do it……
Got your printers ready?……Ready….Set….Bake!
- 2 cups Flour
- 2 tsp Baking Powder
- 1/2 tsp Salt
- 1 cup Brown Sugar (packed)
- 1 tsp Lime Rind
- 1 Eggs (beaten)
- 1 Banana
- 1 Tbsp Lime Juice
- 2/3 cup Cream Cheese (room temperature)
- 1/4 cup Raisins or Cranberries
STEP 1: Preheat oven to 350F. Grease 7″ cake pan.
STEP 2: In a bowl sift together flour, baking powder, salt. Stir in lime rind.
STEP 3: Mash banana with lime juice. Set aside.
STEP 4: Beat together brown sugar and cream cheese. Mix in egg and banana mixture until well incorporated. Fold in raisins.
STEP 5: Spoon cake batter into greased cake pan and bake for 40-45 minutes or until the middle is well done.
STEP 6: Let cake cool down in a pan for 10 minutes before turning it out on the cooling rack. Cool cake completely before icing it.
- 1 cup Icing Sugar
- 1-2 tsp Lime Juice
- 1 tsp Lime Rind
STEP 1: Mix icing sugar, lime juice and lime rind together until you have smooth , but not runny icing. Add more sugar if icing is to runny.
STEP 2: Spread icing all over the cake and allow it to harden before serving.
