Cherry Tomato Caprese Bites

Yes, my dear friends…..Fall is upon us…mornings and nights are getting crisp…..pumpkins are getting ready for picking….
…my CHERRY TOMATOES are done….sad day….I just picked the last of them (the only thing I grew this year).
I decided to give them a proper good-bye using them for something different…..special….worth their sweetness…..
I turned my last bowl of sweet Cherry Tomatoes into CHERRY TOMATO CAPRESE BITES….




….if you were a tomato what better way to go then with some fresh Bocconcini…..Balsamic Vinegar….Extra Virgin Olive Oil and fresh Basil…..that’s like going to heaven for tomatoes, don’t you think?


  • 12 Cherry Tomatoes
  • 12 Boccocini Balls
  • 2 Tbsp Balsamic Vinegar
  • 1 Tbsp Extra Virgin Olive Oil
  • Salt
  • Pepper
  • Fresh Basil (small leaves)

STEP 1: In a bowl mix together balsamic vinegar, olive oil, salt and pepper. Put in Boccocini. Mix it all together and let the boccocini marinate for 10-15 minutes.

STEP 2: Cut tops of cherry tomatoes and remove the flesh. Set aside.

STEP 3: Place one Boccocini in each cherry tomato. Stick a piece of basil leaf on the side and cover with tomato top.

STEP 4: Drizzle with balsamic vinegar and serve.

Before I leave I need to give you a tip I learned from Twitch last night at dinner:

“Chicken grease is really good for styling your hair”……this tip came from Spencer Shay (character on Nickelodeon iCarly show).

…..I was wondering where is my chicken grease disappearing to……JUST KIDDIN’…..I don’t see our dog hanging from Twitch’s hair….not yet!
