Good morning, lovers of Monday……seriously, why so many people dislike Monday so much….
….if I was a Monday I would be seriously walking around with low self-esteem. What did Monday ever do to people?
Well, this Monday has something little extra going for it…..it’s NATIONAL CHICKEN SOUP for the SOUL DAY……
… and to show Monday little love I will show you how to my my family secret Chicken Noodle Soup ….this soup has been in my family for generations and every person added little bit to it to perfect it….
- 3-4 Chicken Thighs
- 2Tbs Vegetable Oil
- 1-2 Small Onions
- 3 cups Carrots (chopped)
- 1 cup Celery (chopped)
- 1 cup Rutabaga (chopped)
- 2 cups Parsnip (chopped)
- 1/2 Head of Savoy Cabbage
- Fresh Parsley
- 32 oz Organic Low Sodium Chicken Stock (you can use only water I use stock as well cause of the added flavor)
- Salt & Pepper
- 5-6 Black Peppercorns
- Cooked Egg Noodles
STEP 1: Wash and pat dry chicken thighs. In a large stock heat vegetable oil and quickly brown chicken thighs on both sides.
STEP 2: Turn the heat to medium-low. Pour in chicken stock and fill the rest with water about 3/4 full pot.
STEP 3: Add chopped vegetables and whole clean onions into chicken soup.
STEP 4: Cut half of Savoy cabbage into quarters. Remove the core and cut each quarter into 3 chunks. Add it to chicken soup.
STEP 5: Toss in black peppercorns, parsley, salt and pepper. Cook on medium-low for 2 hours.
STEP 6: When chicken soup is done remove chicken thighs. Take all the meat from the bones and chop it into chunks. DON’T leave chicken bones in your soup!
Before serving Homemade Chicken Noodle Soup place handful of cooked noodles and chunks of chicken into soup bowl and fill it with Chicken soup….enjoy!
Just looking at these pictures and writing the recipe I am having major Chicken Noodle Soup craving….
….I made big pot of Carrot & Ginger soup last night, but once that is gone…..Chicken Noodle will be next….especially since the weather completely turned and we are getting first frost.
