It’s little gloomy outside last few days, but as long as we have sunshine in our hearts it doesn’t matter what the weather is like, right?
If you are feeling down ….. don’t give up …..we all have been there once or twice. No matter what your circumstance is ….. you are strong enough to handle it …. I know you are …. I believe in you …..God believes in you …. your loved ones believe in you.
Today as I drove my youngest son to his trauma counseling I saw a sign …. on the side of the road …. ” Prayer is the bridge between panic & peace” ….. I kept repeating it all the way home …
Last 9 months I have been taking care of my children both suffering from post trauma depression ad well as physical pain …. my husband works out of town and we don’t see him for 3 months at the time ….. I have been dealing with so many issues 24/7 for last 9 months while trying to run and grow my business ….. I’ve been trying to keep it all together …. being strong ….
You know what, last night I broke down …..my son was crying himself to sleep and I just couldn’t do it anymore ….. I yelled at him …. I yelled at him to stop crying because his constant crying is killing me …..
The second the words came out I knew what I did ….. I couldn’t take it back, but I didn’t give up …..
….. I called my best friend …..she was there within 5 minutes calming and putting my children to sleep while I was praying ….. praying for strength ….. thanking for her friendship ….. asking for forgiveness ….. admitting that I am just an imperfect human disguised as a SUPERMOM ….
….so no matter what you are going through right now ….. you can handle it …. ask for help …. pray ….. and count your blessings.

So today I am sharing with you one of the results of late night ….. couldn’t sleep ….. baking sessions …… my PINA COLADA BUNDT CAKE
- 13/4 cup Icing Sugar
- 3 Eggs
- 3/4 cup Oil
- 3/4 cup Buttermilk
- 1/4 cup Dark Rum
- 3 tsp Baking Powder
- 4 cups Flour
- 14-16oz Pineapple Chunks (drained and juice reserved)
- 1/4 cup reserved Pineapple Juice
- 2 Egg Whites
STEP 1: Preheat oven to 375F. Grease large bundt cake with butter and cover completely with fine shredded coconut.
STEP 2: Beat together icing sugar, eggs and oil. Blend in dark rum and pineapple juice.
STEP 3: In a bowl whisk together flour and baking powder.
STEP 4: Alternating add dry ingredients and buttermilk into the mix starting and ending with flour. Do not over mix.
STEP 5: Fold in pineapple chunks.
STEP 6: In another bowl whip egg whited until they form peeks. Fold in gently into the bundt cake dough.
STEP 7: Pour into the bundt cake and bake for 45 minutes. Turn the oven down to 350F and bake for additional 15 minutes.
STEP 8: Take bundt cake out of the oven and allow it to cool down for 10 minutes before turning it over onto cooling rack.
Shredded coconut will bake into the bundt cake and it will make crunchy coconut crust.
You can serve Pina Colada Bundt cake just dusted with icing sugar or you can make a pineapple glaze using leftover pineapple juice and icing sugar. Sprinkle with shredded coconut.
