Good morning, my sweet friends!
It’s almost weekend…..or long weekend for most of us! Aren’t you excited?
I will be busy loving on my boys…..both of them are not in the best shape this week…..& I will be making birthday cake for my little nephew….
…..he placed an order yesterday morning personally and he is paying me in hugs…..70 hugs to be exact…..how can I refuse.
What are you up to this weekend? Anything special?
…..and I also planning on spending few hours in my kitchen doing what I love….showing my family & friends through food.
Speaking of food….I have a delicious RICOTTA & RED PEPPERS STUFFED MEATLOAF for you today.
This meatloaf like many other meals was born from cleaning my fridge and dinner deadline…..I do work best under pressure!
It is cheesy….garlicky….delicious……and super easy.
- 1,5lbs Lean Ground Beef
- 2 cups Oats
- 1 Onion (finely chopped)
- 1 Tbsp Garlic (chopped)
- 1 Egg
- 1 cup Ricotta Cheese
- 2 Cloves Garlic (crushed)
- Bocconcini (optional)
- 2 Red Peppers
STEP 1: Preheat oven to 400F.
STEP 2: In a bowl mix together ground beef, oats, onion, garlic, egg, salt and pepper. Mix until well combined.
STEP 3: In a small bowl mix together ricotta and crushed garlic.
STEP 4: Line counter with a wax paper and spread or roll out ground beef mixture to a rectangle about 1″ thick.
STEP 5: Spread ricotta and garlic on top. On the bottom 1/4 place Bocconcini balls and cover them with cleaned red pepper halves all the way along the bottom about 2″ away from the edge.
STEP 6: Roll tightly and place into baking sheet. Bake for 50 minutes.
STEP 7: Allow the meatloaf sit for 10 minutes before cutting it.
You can serve Ricotta & Red Pepper Stuffed Meatloaf with brown or mushroom gravy on top, but honestly I didn’t need it.
I enjoy my Stuffed Meatloaf with creamy mashed potatoes and lot of steamed veggies or with Creamed Paprika Yellow Beans.

FYI, Hormone Boy and his sweet girlfriend did break up. It is very strange to me cause they care about each other very much (and I adore her).
HB decided not to dwell on the break up and think positive thoughts just like his mamma taught him. He’s hoping things will work out and he’s working on becoming better person along the way.
I am so proud how mature he is…..no teenage drama….no resentment…..no games and negativity. He cares deeply for her and just wants her to be happy with or without him…..I love that kid!
