Did you know …… WALDORF SALAD is one of the traditional salads that dates back to 1893 when maître d’hôtel of famous Waldorf Hotel in New York City Oscar Tschirky came up with this delicious dish?
Traditional Waldorf Salad was a basic salad of cut up apples, celery and mayo served on a bed of lettuce. Later in 1928 Waldorf salad was made even better with adding crunchy walnuts ….. then the grapes came into play.
Well, today I am taking classic Waldorf Salad and turning it into ….. Waldorf Style Chicken Salad by replacing some of the mayo with Balkan yogurt and adding juicy chicken chunks ….. yummy.
- 1 Large Skinless Boneless Chicken Breast
- 1 Tbsp Olive Oil
- 1 cup Juicy & Firm Apples
- 1 cup Green Seedless Grapes
- 1/2 cup Celery (optional)
- 1/4 cup Walnuts (chopped)
- 1/4 cup Light Mayo
- 1/4 cup Plain Balkan Style Yogurt
- 1 tsp Lemon Juice
- Salt & Pepper to taste if needed
STEP 1: In a skillet heat the oil on medium high and grill chicken breast until it’s done. Let it cool down and then chopped into smaller cubes. You can chop raw chicken breast and grill it in pieces. It will finish faster, but it won’t be as juicy.
STEP 2: In a large bowl combine chopped apples , chopped celery, cut up grapes (in halves), chopped walnuts, light mayo, Balkan yogurt and lemon juice. Mix it well. Add chopped up chicken and toss it gently around until everything is lightly cover with mayo and yogurt mixture.
Tip: You can make Waldorf Style Chicken Salad with rotisserie chicken from your local deli or with leftover chicken. For lighter version of Waldorf Style Chicken Salad skip the mayo all together.
