Zucchini Grapefruit Loaf with Citrus & Lavender Glaze

 

How is everyone doing this fabulous Saturday morning?

…. I am so excited today ….. my daughter from another mother is coming over & we will be making super secret Sweet Table that will be revealed to few of my friends tonight during my “Girls Night In”  party.

I will reveal it to all of you Sunday on my facebook page  so if you are still not following me ….. get on it …. otherwise you won’t get my updates!

Anyway …… before I burst from excitement  & spill the beans prematurely ….. let move on business at hand.

 

Today we are baking something yummy ….. easy ….. unusual ….. unique ….. & absolutely delicious ….

 

 

…. we are baking ZUCCHINI GRAPEFRUIT LOAF with CITRUS & LAVENDER GLAZE ….. are you rolling your eyes or thinking …..hmmmm ….interesting flavor combination ….?

 

Trust me ….. there were few skeptics in the family crowd when I announced my new recipe for ZUCCHINI GRAPEFRUIT LOAF with CITRUS & LAVENDER GLAZE….

….only until they tried it …. loved it ….. & keep bothering me to make some more.

 

Zucchini Loaf

Zucchini Grapefruit Loaf with Citrus & Lavender Glaze

 

I am sharing with you this recipe for ZUCCHINI GRAPEFRUIT LOAF in hopes that you will make it and give me a feedback …. an honest feedback …..

….. that’s how confident I am that this Zucchini loaf recipe will make it to the top of your recipe file.

 

Each Zucchini & Grapefruit loaf makes 12 slices/servings.

Ingredients:

  • 2 cups Flour
  • 1,5 cup Whole Wheat Flour
  • 4 tsp Baking Powder
  • 4 Eggs
  • 1,5 cup Sugar
  • 1 cup Unsweetened Apple Sauce
  • 1 cup Buttermilk
  • 1 Grapefruit (juice & pulp)
  • 2 – 2,5 cups Zucchini (grated)

STEP 1: Preheat your oven to 350F. Grease 2 – 9″ loaf pans.

STEP 2: Beat together eggs and sugar until fluffy. Gradually on medium low speed beat in apple sauce, buttermilk, grapefruit juice and pulp.

STEP 3: In a large bowl whisk together flour, whole wheat flour and baking powder. Set is aside.

STEP 4: Mix grated zucchini into wet ingredients mixture.

STEP 5: Gently fold in dry ingredients mixture. Do not overmix.

STEP 6: Evenly divide zucchini batter into greased loaf pans and bake for 40-45 minutes. Allow it to cool for 10 minutes before removing zucchini loaves onto cooling rack.

 

 

Citrus & Lavender Glaze

Ingredients:

  • 1,5 cup Icing Sugar
  • 1 tsp Lemon Juice
  • 3 Tbsp Grapefruit Juice w. Pulp
  • 1 tsp Edible Lavender

STEP 1: Mix all the ingredients together until you have smooth , but fairly thick glaze.

STEP 2: Pour or spread the glaze over completely cooled zucchini & grapefruit loaves.

 

 

It does sounds and looks delicious …… doesn’t it?

It also have way less sugar & fat then regular Zucchini loaf with glaze. You can leave out the glaze and lower the sugar & carbohydrates …. it still will taste delicious and moist.

If you are skipping the Citrus Glaze just add lavender into the Zucchini loaf batter before baking.

  2. Hi Bibi…while I’m not rolling my eyes, I AM thinking what a unique flavor combination! I bet it is fantastic! It looks rich and moist and I imagine with a light sweet flavor! Hurray for ‘Girls Night In’!
