If you are following me on facebook (if not you should) you know that on Monday I revealed my secret …… I never ever made or baked a PIE …. yes, it’s true ….. total Pie virgin.
I decided to turn my secret into a challenge and asked my foodie friends to share with me their best pie recipes. My challenge was to make the winning pie (the one with the most likes) last night & share it with you all today.
Last night I made Cindy’s winning pie …..
CHOCOLATE PEANUT BUTTER with BACON PIE (adapted from Hun …. What’s for Dinner?)
This recipe will make 2 – 9″ shallow dish pies or 1 – 9″ deep dish pie.
Ingredients – Crust:
- 2 1/2 cups flour
- 1/2 tsp salt
- 1 1/2 tsp baking powder
- 1/2 lb Crisco
- 1 Tbs lemon juice
- 1 egg, room temperature
STEP 1: In large bowl whisk together flour, salt and baking powder. Cut in Crisco and work it until mixture resembles large coarse crumbs.
STEP 2: In 1 cup measuring cup beat together egg and lemon juice. Add water to make it 1 cup.
STEP 3: Add little bit of egg and lemon mixture into the pie dough and work it until the dough starts to stick together. Add egg mixture as needed.
STEP 4: Preheat oven to 350F. Coat 2 – 9″ shallow pie plates with butter spray.
STEP 5: Divide pie dough in half and on floured surface roll out each half (one at the time) into 1/8″ thickness.
STEP 6: Carefully place dough into pie plate. Using sharp knife cut of the hanging edges.
STEP 7: Roll out the dough scraps into 1/4″ thickness and using 1″or 2″ cookie cutter cut out shapes.
STEP 8: Using the leftover egg mixture glue shapes onto the upper inside part of the dough in pie dish.
STEP 9: Using fork make holes in bottom and sides of pie dough.
STEP 10: Bake 10-15 minutes or until golden brown. Cool completely.
Ingredients – Chocolate Sauce:
- 1 cup Whipping Cream
- 1/2 cup brown sugar
- 1 1/2 cup Semi-sweet Chocolate Chips
- 1 Tbs butter
STEP 1: In a saucepan on medium heat while stirring frequently bring whipped cream and brown sugar to low boil. Take of the heat and pour in chocolate chips.
STEP 2: Let it sit for few minutes then stir until chocolate chips are melted. Stir in butter as well. Set aside.
Ingredients – Peanut Butter Filling
- 1- 8oz pkg Cream Cheese, softened
- 1/2 cup Smooth Peanut Butter
- 3/4 cup Powdered Sugar
- 1 cup Whipping Cream
- 1 tsp vanilla
- 6 slices Bacon ( crisp & chopped)
- 2 Bananas (sliced)
STEP 1: Beat together cream cheese and peanut butter until smooth and fluffy. Gradually beat in powdered sugar and vanilla.
STEP 2: In another bowl beat whipped cream until soft peeks.
STEP 3: Gently fold whipped cream into peanut butter mixture.
Chocolate Peanut Butter Pie with Bacon Assembly
STEP 1: Pour 1/3 of chocolate sauce into each pie shell.
STEP 2: Sprinkle 1/3 of crisp bacon over chocolate sauce in each pie.
STEP 3: Arrange sliced bananas on top of bacon.
STEP 4: Evenly spread peanut butter filling on top of bananas. Decorate with leftover chocolate sauce and bacon.
STEP 5: Cool in the fridge for minimum of 4 hours before serving.
As I said this recipe will make 2 shallow dish Chocolate Peanut Butter Pies. I made one with bacon and one without.
CONFESSION: I bought shallow dish pie plates. I didn’t realize this recipe is for deep dish pie. I made one pie first and I forgot to make holes with fork. My pie shell blew up. I had to poke it while baking. Then I realized I have enough dough to make another pie so I repeated the process, but this time without bacon.
RESULT: Both pies are absolutely delicious and I am no longer pie virgin.
