The year 2012 might be coming to an end , but we are still in holiday mood …… and that means there is still plenty of COOKIES to be eaten among other things.
One of the most popular all year round cookies for children and adults is Oatmeal Raisin Cookie …… so during holidays this lunch box staple deserves a little make over …… little bit of cinnamon ….. handful of cranberries ….. splash of icing and festive candy crown
…… and all year round cookies turn into festive holiday CINNAMON OATMEAL CRANBERRY COOKIES
These delicious CINNAMON OATMEAL CRANBERRY COOKIES were adapted from McCormick website where you can find other variations to this recipe.
This recipe makes 6 dozen or 36 cookies.
- 2 cups Flour
- 1Tbs Cinnamon
- 1/2 tsp Salt
- 1 cup Butter (softened)
- 1 cup Brown Sugar (firmly packed light)
- 1 cup Sugar
- 2 Eggs
- 1 tsp Vanilla Extract
- 2 cups Quick-Cooking Oats
- 1 cup Dried Cranberries
STEP 1: Preheat oven to 350°F.
STEP 2: In a medium bowl whisk together flour, cinnamon, baking soda and salt.
STEP 3: In a large bowl beat butter and sugars until light and fluffy. Gradually beat in eggs and vanilla; mix well.
STEP 4: Gradually beat in flour mixture on low speed until well mixed. Stir in oats and cranberries.
STEP 5: Drop by rounded tablespoons onto ungreased cookie sheets.
STEP 6: Bake 10 to 12 minutes or until lightly browned. Cool on baking sheets 1 minute. Remove to wire racks and cool completely.
If you would like to make these CINNAMON OATMEAL CRANBERRY COOKIES festive top each cookie with 1 teaspoon of thick sugar icing and mint candy.
