Creamed Chanterelles Over Couscous

 

Golden Chanterelles – aromatic fleshy wild mushroom to many ……. savory delicacy to the culinary world.

Which one are you?

If you are reading this I believe you are just like me ….. part of the culinary world.

So, my culinary friends ……. did you ever taste or prepare  dishes using CHANTERRELLES ?

Yes …… or ….. No …… either way I have an easy and delicious Creamed Chanterelles Over Couscous recipe that will impress not only your family, but also your  dinner guests.

 

 

Growing up in Europe and in a hotel industry I had my share of Chanterelle dishes ….. sauteed Chanterelles …… Chanterelle soup …. Scrambled Eggs with Chanterelle ….. Chanterelle Crostini …….

….. my favorite of all CHANTERELLE dishes was …… still is …… CREAMED CHANTERELLES  sauce over Egg Drop Pasta or Couscous.

 

I don’t know if it’s the creamy taste of thin sliced chanterelles sauteed with butter and shallots then finished with heavy cream ….. or the childhood memories this dish brings.

I think it’s a  little combination of both …… memories of my dad serving my first Creamed Chanterelle dish and the comforting feeling that comes over me when the creamy sauce enters my mouth ….. it’s like a symphony for the taste buds.

 

Enough of teasing you ….. time to reveal my Creamed Chanterelles sauce recipe so you too can experience the taste that brings me back to my childhood.

 

Creamed Chanterelles Over Couscous

 

Ingredients:

  • 1lb Fresh Chanterelles
  • 1 Shallots (finely chopped)
  • 2 Tbsp Butter
  • 1 Tbsp Paprika
  • 1 cup Whipped Cream
  • 1 Tbsp Flour
  • Salt
  • Pepper

STEP 1: Clean and dry chanterelles. Slice them into thin slices.

STEP 2: In a skillet melt butter on medium high heat. Add finely chopped shallots. Saute for couple minutes. Add paprika and saute for 2 more minutes.

STEP 3: Add sliced chanterelles into the skillet. Turn heat to medium, cover and let saute for 5 minutes.

STEP 4: Meanwhile mix together whipped cream with flour.

STEP 5: After chanterelles are soft add whipped cream and flour mixture. Cook until it thickens a bit. Salt and pepper to taste
