Spanish Rice

 

Good morning ….. how is everyone feeling this wonderful first December Monday?

Can you believe we are in the last month of 2012? Are we ready to say good bye to 2012?

I don’t know about you, but my family is ready to move on ….. 2012 was life changing & challenging  for us and we are ready to move on stronger …. wiser …. more positive …. grateful and blessed ….. we are ready to live life to the fullest …..together as a family.

One thing I would like to do more often in the upcoming year is to cook with my boys ….. sharing my passion with them and make more memories together.

Sometimes we get so wrapped up in things that  year ….. two years ….. three years from now won’t matter & we forget to find time for the little things that memories are made of.

We all have been guilty of that ….. I found myself so many times to be wrapped up in my work ….. computer ….. housework that I ignored my children till I noticed their sadness ….

…. I am here to tell you …. past is past ….. what was yesterday is gone ….. what we do from this minute is what will matter tomorrow ….

I believe in me  & I believe in you ….. we can do it ….. we  can make 2013 the best year of our life …..

 

 

….. we can make 2013 full of memories …… I am starting today by cooking with my boys ….. teaching them one simple recipe that every bachelor should know how to make …..

….. the first dish their father made for me when we were dating ….. SPANISH RICE ……

 

This Spanish Rice recipe serves 4-6.

Ingredients:

  • 2 lb Lean Ground Beef
  • 1 Onion (chopped)
  • 2-15oz cans Diced Tomatoes
  • 1 or 2 Bell Peppers (chopped)
  • 2 Cloves Garlic (minced)
  • 6 cups Cooked Long Grain Rice
  • Salt
  • Pepper
  • Parmesan Cheese

STEP 1: In a large skillet brown ground beef with onions. Drain the fat.

STEP 2: Add diced tomatoes, bell peppers and garlic into the skillet with ground beef. Turn heat to medium and cook for about 20 minutes.

STEP 3: Meanwhile cook your rice. When rice is cooked add it to the skillet. Mix well together. Salt and pepper to taste.

STEP 4: Serve Spanish Rice  sprinkled with Parmesan cheese.

I think Spanish Rice is a perfect  starter recipe to teach my boys ….. to catch that perfect girl  just like their daddy did (wink,wink).

Now I just need to teach them how to make Chocolate Truffles.

    2012 has been CRAZY for me…. I am sure it is a year that will always stand out in my mind….

    That being said, I love how cooking is so much more than food preparation for you. It reminds me of my own family traditions and is very touching.

    Some of my cherished memories are standing with mom as she cooked, trying to learn from her. I did that again this time when she was here on a visit. :-)
