I will be busy baking ….. baking …… and baking!
During busy weekends I always plan meals that take me 30 minutes or less ….. and are not from a can or a box …..
One of my favorite 30 minute or less go-to meals is APRICOT GLAZED PORK CHOPS.
I made these delicious ….. juicy ….. little sweet & little tart pork chops few years ago and they became an instant hit.
It is one of those meals you can dress it up or dress it down ….. depends on the occasion. APRICOT GLAZED PORK CHOPS will feed your family during a busy week …..
…. they will also impress your dinner party guests on the weekend…..
Some of you know that few weeks ago I made a hard decision & pulled my oldest son from our local high school …..
…. his health & mental state have been so bad since his brother’s accident …. he was failing so far behind and all of his academic teachers made it clear that they are not flexible or willing to help him out ….. make exceptions …. show compassion.
One of them even refused to spend few minutes at the counselor’s office to talk about helping my child …. instead she sent a nasty email about him ….
You know, it’s such a shame that there are teachers like that …..
… no wonder more and more children are being homeschooled.
Once we made our decision and we got into homeschooling system I was so surprised how many children in our little town are being homeschooled ….
Unfortunately, sometimes it takes a tragedy to see some people for who they are …… to see their compassion …..
As I said …. it was a hard decision, but in the end I had to do what was right for my child.
If you are dealing with similar issues, listen to your heart and to your child …. yes, your life will change and there will be some sacrifices to be made , but in a long run it will be worth it ….. you will end up with successful …. well rounded ….. compassionate young adult.
…. and the extra time spent with your child is PRICELESS!
So long story short ….. I am a home schooling mom ….. I am very excited about this new venture, but I am sure I will be making more 30 minute meals then usual …..
….. meals like APRICOT GLAZED PORK CHOPS …… and it’s time to dust off the slow cooker as well.
- 4-6 Thin Cut Pork Chops
- 1 Tbsp Butter
- 1 Tbsp Olive Oil
- 14oz Vegetable Broth
- 1/4 cup Apricot Jam
- 1 Tbsp Dijon Mustard
- 1-2 Tsp Cornstarch
- 2-3 Tbsp Water
- Salt & Pepper
STEP 1: Wash and pat dry pork chops. Season to taste with salt and pepper.
STEP 2: In a large skillet heat butter and olive oil until hot enough for frying pork chops. Place pork chops into the skillet.
STEP 3: Fry pork chops until brown about 4 minutes. Turn and fry another 2-3 minutes or until the center is no longer pink.
STEP 4: Transfer pork chops onto a plate and keep warm.
STEP 5: Add broth, Dijon mustard and apricot jam to the skillet. Whisk until well blended.Stirring frequently bring to boil on high heat until sauce is reduced to about 3/4 cup.
STEP 6: While stirring the sauce also in a small dish mix together corn starch and water until smooth.
STEP 7: After sauce is reduced add cornstarch mixture to the skillet and stir for few seconds until the sauce thickens little more.
STEP 8: Spoon apricot glaze over pork chops and serve.
You can serve APRICOT GLAZED PORK CHOPS with pretty much anything ….. over pasta ….. with side of rice pilaf or risotto …. salad …… potatoes.
I like my APRICOT GLAZED PORK CHOPS with rutabaga potato mash and glazed carrots.
