….. I am sitting here in my warm & cozy office while the weather outside is …… frightful …… and all I can think about is …..
….. comfort food …… stick to your ribs …. make you warm all over ….. COMFORT FOOD.
I am thinking …… Cheese …… Cream ….. Bacon …… I am thinking …… CHEESY BACON SCALLOPED POTATOES ……..
… not as a little side dish ……. big plate of Cheesy Scalloped Potatoes with Bacon ……
….. close your eyes & imagine ……. melted cheese ….. crispy bacon …. between layers of golden potatoes all combined with cream.

Time to get into the kitchen and make the ultimate POTATO comfort dish ….. time to satisfy the cold weather cravings ….. time to beat
the winter blues with big plate of CHEESY SCALLOPED POTATOES with BACON.
Ingredients:
- 1/2lb Bacon
- 6-7 Medium Potatoes (peeled & finely sliced)
- 1 cup Heavy Cream
- 1 tsp Thyme
- 1/2 cup Edam Cheese (grated)
- Salt
- Pepper
STEP 1: In a large pot cook sliced potatoes in a boiling water until little tender about 10 minutes. Drain and set aside.
STEP 2: In a skillet cook bacon until crisp. Remove crispy bacon from the skillet and set it aside on a paper towel. Crumble before using.
STEP 3: Preheat oven to 375F.
STEP 4: In a saucepan heat cream and thyme on low heat until warm (do not bring it to boil). Set aside.
STEP 5: In a buttered casserole dish layer sliced potatoes, crumbled bacon and Edam cheese seasoning each layer of potatoes with salt and pepper. You should have 4 layers of potatoes when you’re finish.
STEP 6: Pour warm cream all over the top layer of potatoes.
STEP 7: Cook for 45 minutes.
I did mention before that I want a big plate of CHEESY BACON SCALLOPED POTATOES , but in reality …… this dish is so filling
that a little plate will fill you up especially if you serve it with nice side salad.

These sound delicious and I have been looking for new Scalloped potato dish. Can you believe I have never even tried Edam cheese? I’ll let you know how it turns out!
