….. and little bit of Coconut Oil takes this Creamy CARROT & GINGER Soup to the next level when it comes to simple & healthy soups.
Did I mention that both of my boys couldn’t get enough of my Carrot & Ginger soup especially after I topped it with crunchy & crispy homemade croutons?
….. true story …. my picky eaters gobbled it up and asked for seconds …..
….. love when my plan ” get them to eat more vegetables” comes together without a hitch.
Ingredients:
- 1 Tbsp Coconut Oil
- Onion (chopped)
- 2-3 Garlic Cloves (minced)
- 11/2 Ginger Powder
- 2 lbs Carrots (peeled & chopped)
- 3 Large Parsnips (peeled & chopped)
- 5 cups Low Sodium Vegetable Broth
- Salt
- Pepper
- 1/2 cup Cream
- Croutons
STEP 1: In a stock pot melt coconut oil over medium heat. Add onions and saute until transparent.
STEP 2: Add minced garlic & ginger powder and saute for couple of minutes before adding chopped carrots and parsnip. Saute for 5 minutes.
STEP 3: Pour vegetable stock into the pot and on low heat cook/simmer until carrots and parsnips are tender.
STEP 4: Remove from heat and using immersion blender puree until smooth. Add salt & pepper to taste.
STEP 5: Return to the stove and add cream. Cook for few minutes until soup is completely heated through.
STEP 6: Serve topped with croutons.
