Another lovely Monday morning!
We are already in the middle of January …. honestly time flies when you’re enjoying life!
I want to start this week with yummy breakfast treat ….. MUFFINS …… warm ….. moist …. unusual flavor ….. PINEAPPLE BANANA MUFFINS.
Who would resist basket full of warm …. moist …. tropical PINEAPPLE BANANA MUFFINS on Monday morning with cup of fresh coffee or glass of orange juice?
I’d say: “Yes, please ….. pass a couple”
Last few days I was restricted on using my laptop due to bad eye allergy & you know what I do when I can’t do anything else ….. I bake.
Since my brain was just a bit foggy from my medication I turned to my favorite source of inspiration Pinterest for some help in unusual MUFFIN recipes.
…. and there it was …… PINEAPPLE BANANA MUFFINS ….. from Dragon’s Kitchen
….. adding PINEAPPLE to Banana Muffins …… genius ….. why didn’t I think of that?
I did little adjusting to my family’s taste, but I can tell you these PINEAPPLE BANANA MUFFINS are Da Bomb
This recipe makes 12 muffins and was adjusted from original recipe from Dragon’s Kitchen
Ingredients:
- 1 1/2 cup Flour
- 3/4 cup WW Flour
- 2 tsp Baking Powder
- 1/4 tsp Salt
- 1/2 tsp Ground Cinnamon
- 2 large ripe Bananas (mashed)
- 2 Eggs
- 2/3 cup Brown Sugar (firmly packed)
- 1/2 cup Butter (softened)
- 1 Tbsp Vanilla
- 1 cup Pineapple (chunks – reserve 12 chunks for garnish)
- 3 Tbsp Sugar
STEP 1: Preheat oven to 375 F. Lightly grease muffin tin.
STEP 2: In a large bowl whisk together flour, baking powder, salt and cinnamon.
STEP 3: In another bowl or kitchen mixer beat together brown sugar and butter. Gradually beat in eggs. Mix in bananas and vanilla.
STEP 4: Stir in dry ingredients until blended. Fold in pineapple until just combined. Spoon into prepared muffin cups, dividing batter equally.
STEP 5: Top each muffin with a pineapple chunk & sprinkle with sugar. Bake for 25-30 minutes or until done.
I hope you will enjoy these PINEAPPLE BANANA MUFFINS as much as we did. These muffins not only make delicious breakfast food or after school snack ….. they fit perfectly into their little lunchboxes.
